Tips for success
For maximum crispiness, use a heavy cast-iron skillet and let it heat thoroughly before adding the wraps. Press down with a spatula while toasting to ensure even browning.
If the skillet seems dry, add a tiny drizzle of olive oil, but the chicken juices should provide enough fat.
To keep the wraps warm while toasting batches, place them on a baking sheet in a 200°F (95°C) oven. This helps the cheese (if any) melt and keeps the exterior crispy. Serve immediately after slicing to enjoy the contrast between the crunchy shell and the juicy filling.
Variations
- Spicy Shawarma: Add 1 teaspoon of cayenne pepper or a chopped fresh chili to the marinade for extra heat. Serve with a cooling yogurt sauce if desired.
- Vegetarian Shawarma: Replace the chicken with 2 cups of sliced portobello mushrooms or halloumi cheese. Sear until golden and proceed with the recipe. Adjust cooking time to 5-6 minutes.
- Garlic Sauce Swirl: Spread a spoonful of toum (garlic sauce) on the tortilla before adding the filling. This adds an extra garlicky kick and creaminess.
- Wrap with Rice: Add a layer of seasoned rice (such as biryani or pilaf) to the wrap for a heartier meal. This turns it into a shawarma rice bowl-style wrap.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the refrigerator for up to 3 days. Reheat in a dry skillet over medium heat to restore crispiness.
- Freezer
- Freeze assembled but untoasted wraps in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat frozen wraps directly in a skillet over medium-low heat for 5-7 minutes per side, or until warmed through and crispy.
Store leftover wraps in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a dry skillet over medium heat for 2-3 minutes per side until warmed through and crisp again.
Avoid microwaving, as it makes the wrap soggy. If storing components separately, keep the chicken, onions, and pickles in separate containers and assemble fresh when ready to eat.
The chicken can be marinated up to 24 hours in advance, which enhances the flavor. The sumac onions can also be prepared a day ahead and stored in the refrigerator.
Cooked chicken strips can be refrigerated for up to 3 days and used to assemble wraps quickly. The assembled wraps can be toasted just before serving.
Serving ideas
Serve the wraps hot, sliced in half to showcase the layers. They're perfect as a standalone dinner, but you can also offer extra sumac onions, pickles, or a side of tahini sauce for dipping.
For a complete meal, pair with a simple cucumber salad or roasted vegetables.
These wraps are also great for meal prep—make a batch on the weekend and enjoy them for lunch throughout the week. If serving a crowd, cut the wraps into smaller pieces and serve as appetizers. The crispy exterior and juicy filling make them a crowd-pleaser.

Crispy Chicken Shawarma Wrap with Garlicky Layers

Ingredients
- 2 lb boneless, skinless chicken thighs, thinly sliced
- 1 tbsp minced garlic
- 2 tbsp mayonnaise
- 1 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp black pepper
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 tsp salt
- 1/2 lemon juiced
- 1 cup sumac red onions
- 1/2 cup sliced tangy cucumber pickles
- 4 large flour tortillas
Instructions
- In a large bowl, combine the sliced chicken thighs with minced garlic, mayonnaise, olive oil, smoked paprika, garlic powder, black pepper, cumin, coriander, salt, and lemon juice. Mix thoroughly until every piece is coated. Cover and refrigerate for at least 30 minutes or up to overnight.
- Heat a cast-iron skillet over high heat until smoking. Add the marinated chicken in a single layer (work in batches if needed) and sear for 7 minutes without moving, until deeply charred and caramelized on the bottom. Flip and cook for another 2-3 minutes until cooked through.
- Transfer the seared chicken to a cutting board and let it rest for 3 minutes. Then slice into thin strips against the grain.
- Lay a tortilla on a flat surface. Pile a quarter of the sliced chicken along the center, then top with sumac red onions and sliced cucumber pickles. Fold the sides over and roll tightly into a compact wrap.
- Return the skillet to medium heat with any remaining juices. Place the wraps seam-side down and toast for 2-3 minutes per side, until golden and crunchy on both sides. Press gently with a spatula.
- Remove the wraps from the skillet and let them cool for 1 minute. Slice in half diagonally to reveal the layers, and serve hot.
