Tips for success
For the crispiest wrap, use a cast-iron skillet or griddle and let it get properly hot before adding the wraps. Press down with a spatula or a second heavy pan to ensure even browning.
Don’t rush this step—the pita needs time to develop a golden, crackly crust. If making multiple wraps, keep them warm in a low oven while you finish the rest.
The garlic toum sauce is the star of this dish. If making it at home, use neutral oil and fresh lemon juice for a stable emulsion. Taste and adjust the salt and acid as needed.
For extra brightness, add a squeeze of lemon juice over the sliced chicken before assembling. The sauce should be thick and spreadable, not runny.
Variations
- Spicy Shawarma: Add 1-2 teaspoons of harissa paste or a pinch of cayenne to the marinade for a fiery kick. Serve with extra harissa on the side for those who want more heat.
- Vegetarian Wrap: Replace the chicken with grilled halloumi or roasted cauliflower florets. Marinate the vegetables in the same spice mixture and roast until tender. Proceed with the same assembly and griddling steps.
- Pita Pockets: Instead of rolling the wraps, cut the pita in half and stuff the pockets with the chicken, fries, pickles, and a drizzle of toum. Toast the stuffed pockets on the griddle until the pita is crisp.
- Chicken Shawarma Bowl: Skip the pita entirely and serve the sliced chicken over a bed of rice or salad. Top with fries, pickles, and a generous spoonful of toum. This deconstructed version is just as flavorful.
Storage and make-ahead
- Fridge
- Store leftover wraps in the fridge for up to 3 days. Keep the sauce separate if possible. Reheat in a dry skillet to re-crisp.
- Freezer
- Freeze cooked, sliced chicken in an airtight container for up to 2 months. Thaw overnight in the fridge and reheat before assembling.
- Reheat
- Reheat leftover wraps in a dry skillet over medium heat, pressing down with a spatula, until warm and crisp again, about 2-3 minutes per side.
Store leftover wraps tightly wrapped in foil or plastic wrap in the refrigerator for up to 3 days. The pita will soften as it sits, but you can re-crisp them in a dry skillet or toaster oven. Keep the extra toum sauce in a separate container in the fridge for up to a week.
The chicken can be marinated up to 24 hours ahead. Cook the chicken and slice it, then refrigerate in an airtight container for up to 3 days. Assemble the wraps just before serving, or reheat the chicken in a skillet and assemble fresh. The toum sauce can be made up to a week in advance.
Serving ideas
Serve the wraps immediately after griddling, while the pita is still crackly and warm. Cut each wrap in half on a diagonal to show the colorful layers.
Offer extra garlic toum on the side for dunking—this is non-negotiable for the full experience. A squeeze of fresh lemon over the top adds a bright finish.
These wraps are satisfying enough to stand alone, but they also pair well with a simple salad of chopped cucumbers, tomatoes, and parsley.
For a lighter option, skip the fries and add extra pickles. The wraps are best enjoyed fresh, but leftovers can be reheated in a skillet to bring back some crispness.

Crispy Chicken Shawarma Wrap with Garlic Toum

Ingredients
- 2 lb boneless, skinless chicken thighs
- 1/2 cup plain yogurt
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp ground cardamom
- 1/2 tsp ground cinnamon
- 1 tsp kosher salt
- 1 cup garlic toum sauce, store-bought or homemade
- 4 large pita breads
- 1 cup cooked french fries (warm)
- 1/2 cup pickled turnips or dill pickles, sliced
Instructions
- In a large bowl, combine the yogurt, olive oil, minced garlic, lemon juice, cumin, coriander, smoked paprika, cardamom, cinnamon, and salt. Add the chicken thighs and turn to coat thoroughly. Cover and refrigerate for at least 30 minutes or up to 24 hours.
- Heat a large skillet or griddle over medium-high heat. Add the marinated chicken thighs in a single layer. Cook for 5-7 minutes per side, until deeply browned and cooked through. Transfer to a cutting board and let rest for 5 minutes before slicing thinly.
- Using a sharp knife, slice the rested chicken into thin strips. Keep warm while assembling the wraps.
- Lay a pita flat. Spread a generous amount of garlic toum sauce over the center. Add a portion of sliced chicken, a few french fries, and some pickled turnips or pickles. Fold in the sides and roll tightly like a burrito.
- Heat a griddle or large skillet over medium heat. Place the wraps seam-side down and press gently with a spatula. Cook for 2-3 minutes per side, until golden brown and crispy on both sides.
- Transfer the crispy wraps to a cutting board. Slice in half crosswise to show the layers. Serve immediately with extra garlic toum sauce for dipping.
