Tips for success
For the crispiest chicken, make sure the griddle is scorching hot before adding the tortillas. Use a heavy cast-iron pan and let it heat for a few minutes. Press the chicken evenly and thinly; any thick spots will not cook as quickly.
When flipping, use a thin spatula to lift the tortilla gently to avoid tearing. If making a large batch, keep the cooked tortillas warm in a low oven while searing the rest.
The Caesar dressing can be made up to a week in advance and stored in an airtight container in the refrigerator. If it thickens after chilling, whisk in a teaspoon of warm water to bring it back to a drizzling consistency.
For a lighter version, substitute half the mayonnaise with Greek yogurt, but note that the flavor will be tangier and less rich.
Variations
- Spicy Kick: Add a pinch of cayenne pepper or a few dashes of hot sauce to the chicken mixture before pressing. For extra heat, drizzle with sriracha or chipotle hot sauce when serving.
- Grilled Chicken Version: Use leftover grilled chicken breast, shredded or chopped, and press onto tortillas with a bit of cheese. Sear until crispy, then top with the same Caesar toppings.
- Low-Carb Option: Skip the tortillas and press the chicken into thin patties. Sear and serve over a bed of romaine with the Caesar dressing and parmesan for a salad-style meal.
- Herb-Infused Dressing: Add a teaspoon of chopped fresh herbs like parsley, chives, or dill to the Caesar dressing for a fresh, garden flavor. This works especially well in the summer.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the chicken tortillas in a skillet over medium heat until hot and crisp.
- Freezer
- Freeze cooked chicken tortillas in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat in a skillet over medium heat for 2-3 minutes per side until hot and crisp. Avoid microwaving, as it will make the tortillas soggy.

The tortillas will lose their crispness but can be reheated in a skillet or oven to restore some crunch. The dressing stays fresh for up to a week. Assemble tacos just before serving to keep the lettuce crisp.
The Caesar dressing can be made up to 3 days ahead and refrigerated. The chicken tortillas can be seared and stored in the refrigerator for up to 2 days; reheat them in a hot skillet for 2 minutes per side to re-crisp. Chop the romaine and shave the parmesan just before serving to prevent wilting.
Serving ideas
Serve these tacos immediately after assembling, while the chicken is still crispy and the lettuce is cold and crunchy.
They make a satisfying main course for four, or can be cut into wedges and served as an appetizer for a crowd. Pair with a simple side of black beans or a light salad for a complete meal.
For a fun twist, serve with extra lime wedges or a sprinkle of red pepper flakes for heat. The tacos are also great with a side of tortilla chips and guacamole. If you have leftover dressing, it’s delicious as a dip for vegetables or as a spread on sandwiches.

Crispy Caesar Chicken Tacos with Homemade Dressing

Ingredients
- 2 lb ground chicken
- 1 tsp salt
- 1/2 tsp black pepper
- 8 small flour tortillas
- 2 tbsp olive oil, for the griddle
- 1 cup mayonnaise
- 2 tsp Dijon mustard
- 3 tbsp olive oil
- 1 tsp Worcestershire sauce
- 2 tsp lemon juice
- 2 cloves garlic, minced
- 2 cups chopped romaine lettuce
- 1/2 cup shaved parmesan cheese
Instructions
- In a bowl, combine the ground chicken with salt and black pepper. Mix gently until evenly seasoned. Divide the mixture into 8 portions, about 4 ounces each. Place each portion onto a small flour tortilla and press it out paper-thin, covering the entire surface of the tortilla. The chicken layer should be thin and even, like a patty.
- Place a large cast-iron griddle or skillet over high heat. Add the olive oil and swirl to coat the surface. Let the oil heat until it shimmers, but not smoking. The griddle should be scorching hot before adding the tortillas.
- Place the tortillas chicken-side down onto the hot griddle. Work in batches if needed. Sear for about 4 minutes until the chicken is deeply golden brown and cooked through. The tortilla will crisp and the chicken will release from the griddle when ready.
- Using a spatula, carefully flip each tortilla to crisp the other side for 1-2 minutes, until the tortilla is golden and slightly charred in spots. The chicken should reach 165°F (74°C) in the thickest part. Remove from the griddle and keep warm.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, olive oil, Worcestershire sauce, lemon juice, and minced garlic. Season with a pinch of black pepper. Whisk until smooth and creamy. The dressing should be thick and emulsified.
- Chop the romaine lettuce into bite-sized pieces and shave the parmesan cheese into thin curls. Keep the toppings separate until ready to assemble the tacos.
- Place the crispy chicken tortillas on a serving plate. Top each with a handful of chopped romaine, a generous drizzle of the Caesar dressing, and a shower of shaved parmesan. Fold the tortillas in half and serve immediately.
