Tips for success
For the crispiest result, use a cast-iron skillet or a heavy baking pan that retains heat well. Preheating the pan in the oven while it heats up can help brown the bottom crust.
Also, be generous with the oil between the phyllo layers—this is what creates the flaky texture.
If the phyllo dough tears while stretching, do not worry. Just patch it with a piece of another sheet. The layers will hide any imperfections.
To make slicing easier, use a serrated knife and a gentle sawing motion to avoid crushing the delicate crust.
Variations
- Spinach and Cheese: Replace the ground beef with a mixture of sautéed spinach, feta, and ricotta. Omit the paprika and add a pinch of nutmeg for a vegetarian version.
- Lamb and Mint: Use ground lamb instead of beef, and add chopped fresh mint and a pinch of cinnamon to the filling. The mint adds a fresh contrast to the rich meat.
- Potato and Onion: Swap the meat for diced boiled potatoes and caramelized onions. Season with salt, pepper, and a little paprika. This is a classic vegetarian burek filling.
- Spicy Chicken: Use ground chicken and add chopped jalapeño or red pepper flakes for heat. Replace the smoked paprika with chili powder and serve with a cooling yogurt sauce.

- Freezer
- Wrap tightly in plastic wrap and foil, then freeze for up to 1 month. Thaw in the refrigerator overnight before reheating.

Leftover burek can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place it in a 350°F oven for 10 minutes to restore crispness. Avoid microwaving, as it will make the crust soggy.
You can assemble the burek up to a day in advance and keep it covered in the refrigerator.
When ready to bake, bring it to room temperature for 30 minutes, then bake as directed. You may need to add a few extra minutes to the baking time if starting from cold.
Serving ideas
Serve the burek warm, cut into wedges, as a main dish with a side of yogurt or a simple green salad.
The cool, tangy yogurt contrasts beautifully with the rich, spiced meat and crisp pastry. For a heartier meal, add roasted vegetables or a tomato-cucumber salad.
Burek also makes a fantastic appetizer or party snack. Cut it into smaller pieces and serve on a platter with toothpicks. It is delicious on its own, but a drizzle of yogurt or a sprinkle of fresh herbs can elevate it further.

Crispy Bosnian Burek with Spiced Beef and Cheese

Ingredients
- 1 lb phyllo dough, thawed
- 1/2 cup olive oil, plus more for brushing
- 1 lb ground beef
- 1 large onion, finely chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 cup crumbled feta cheese
- 2 tbsp unsalted butter, melted
Instructions
- In a large skillet over medium heat, cook the ground beef with the chopped onion, salt, black pepper, and smoked paprika. Break up the meat with a spoon and cook until the beef is browned and the onion is soft, about 8 minutes. Remove from heat and let cool slightly. Stir in the crumbled feta cheese until well combined.
- Lay one sheet of phyllo dough on a clean surface. Brush it lightly with olive oil. Place another sheet on top and brush again. Continue until you have a stack of about 4 sheets. Gently stretch the dough with your fingertips to make it thinner and larger, being careful not to tear it.
- Spread a portion of the meat and cheese filling evenly over the stretched dough, leaving a small border at the edges. Starting from one long side, roll the dough tightly into a log, jelly-roll style. Pinch the ends to seal.
- Grease a 9-inch round baking pan or cast-iron skillet with olive oil. Starting at the center, coil the filled dough log into a spiral, tucking the end underneath. Brush the top with olive oil.
- Preheat the oven to 425°F (220°C). Place the pan with the burek in the oven and bake for 30 to 35 minutes, until the crust is deep golden brown and puffed. The cheese should be blistered in spots, and the filling should be bubbling.
- Remove the burek from the oven and immediately brush the hot crust with melted butter. This adds shine and extra flavor. Let it rest for 5 minutes before slicing.
- Cut the burek into wedges with a sharp knife. Serve warm with a dollop of yogurt on the side, if desired. The crust should shatter when you bite into it, revealing the juicy spiced beef and melted cheese inside.
