Tips for success
Work one cone at a time through the wet stages and keep the rest of the station dry. The dip-and-wrap rhythm is the whole recipe: dip, drain, wrap, seal, and only then reach for the filling.
Tearing the Oaxaca cheese by hand into short shreds helps it melt into the beef at the bottom instead of sliding out of the rim, and saving the largest shred pile for the crown gives the bubbly top its height.
The air fryer rewards restraint. Two cones laid on their sides with air between them crisp evenly; four crowded together steam where they touch and come out leathery at the seam.
If a cone finishes before the rest are fried, stand it upright in a mug in a low oven, unwrapped and unfilled, so the shell stays dry. And keep the consomé for dunking genuinely hot — a lukewarm dunk flattens the whole point of the dish.
Variations
- Chicken Birria Cones: Swap the shredded beef birria for shredded chicken birria and its lighter consomé. Warm and fill exactly the same way; the air-fry time stays at 6 minutes.
- Quesabirria Flat Version: Skip the mold: dip a tortilla, lay it flat, cover with cheese and beef, fold and air-fry 5 minutes for a classic quesabirria taco.
- Extra-Spicy Cones: Stir a spoonful of chile de árbol sauce into the consomé before dipping, and add sliced fresh chile with the onion for serious heat.
- Mini Party Cones: Use 4-inch tortillas on small molds, fill with 1 oz beef and 1 oz cheese, and air-fry 4 minutes for two-bite party cones.
Storage and make-ahead
- Fridge
- Unfilled cones up to 2 days airtight; beef and consomé up to 4 days; cool leftovers 2 hours before refrigerating.
- Freezer
- Fried, unfilled cones freeze up to 1 month, wrapped well; consomé freezes up to 3 months; assemble after thawing.
- Reheat
- Crisp unfilled cones 3 minutes at 400°F (200°C) in the air fryer, then fill and pour fresh consomé.
Birria cones are at their best the minute they leave the air fryer, and the broth pour makes them a strictly eat-now food. Still, leftovers happen, and they keep well if the components stay separate.
Store unfilled, fried cones apart from the consomé, beef and garnishes so the shell never sits in liquid. Reassemble and reheat rather than storing finished, filled cones, which lose their crackle within the hour.
Everything except the wrapped cones can be prepared ahead. The beef birria and its consomé keep in the refrigerator for up to 4 days and improve overnight as the flavors settle; rewarm both gently before assembly, bringing the beef back to 145°F (63°C).
The onion can be diced, the cilantro chopped and the lime cut a day ahead in covered containers. Wrapped but unfried cones hold on a tray for up to 2 hours at cool room temperature — no longer — and any leftover cones must be refrigerated within 2 hours of assembly, so plan to fry them just before serving.
Serving ideas
Serve each cone standing upright in a small mug or short glass, which keeps it stable on the plate and catches the first drip of broth. Put a dish of the remaining warm consomé in the middle of the table for dunking, and let the lime wedges, extra diced onion and cilantro travel with it. The dish wants nothing on the side — the cone is appetizer, main event and sauce delivery system at once.
For a group, set up a small assembly line: fried cones standing in mugs, a pitcher of boiling consomé, and bowls of onion, cilantro and lime. Pour at the table in front of everyone, one cone at a time. The pour is the moment the dish is built around, and the first crackle a few seconds later is the reason the whole thing is worth the five minutes of wrapping.

Crispy Birria Cones in the Air Fryer in 6 Minutes

Ingredients
- 1 (8-inch) flour tortilla
- 1 cup red birria consomé, warmed, for dipping and dunking
- 3 oz shredded beef birria, warmed (store-bought or made ahead)
- 2 oz Oaxaca cheese, torn into shreds
- 1 tbsp diced white onion
- 2 tbsp chopped fresh cilantro
- Lime wedges, for serving
- 2 tbsp red birria consomé, boiling hot, for pouring inside
Instructions
- Pour the consomé into a small saucepan and set it over low heat; it should be hot and pourable, not boiling. Add the shredded beef to a small pan beside it so it steams warm, and fluff it with two forks, breaking any large pieces. Heat the beef until it reaches 145°F (63°C) throughout, then let it rest at least 3 minutes before filling. Warm filling keeps the cheese melting on schedule.
- Preheat the air fryer to 400°F (200°C) for about 3 minutes, and stand the cone molds upright in a small mug so they are ready to wrap. Set the cheese, onion and cilantro within arm's reach, because assembly moves quickly once the tortilla is dipped and the clock starts.
- Holding the tortilla by its edge, dip it into the warm consomé for a few seconds per side until it is coated and flexible, with the red chile oil clinging in a thin sheen. Lift it out and let the excess drip off for a moment, so the tortilla is wet but not dripping.
- Wrap the dipped tortilla around the cone mold, wide side down, overlapping the seam as it spirals up the cone. Press the overlap gently so it seals against itself, and pinch the pointed tip closed so no cheese or broth escapes later. Leave the open rim even for the cheese crown.
- Drop a small pinch of Oaxaca cheese into the pointed bottom of the cone, then spoon in the warm shredded beef, pressing lightly so it settles without packing tight. Scatter the diced white onion over the beef so every bite carries a little crunch and bite.
- Pile the remaining Oaxaca cheese over the open rim so it crowns the top, then lay the cone on its side in the air fryer basket. Air-fry at 400°F (200°C) for 6 minutes, until the tortilla is shatteringly crisp and the cheese crown bubbles and browns at the edges.
- Bring the 2 tablespoons of consomé to a rolling boil in the saucepan, then stand the hot cone upright in a mug or small glass. Pour the boiling broth straight into the open top so it runs down through the beef and fills the cone from the inside.
- Finish the cone with a pinch of the remaining diced white onion and chopped cilantro over the cheese crown, and set a lime wedge alongside. Serve immediately with the rest of the warm consomé on the side for dunking, and eat while the shell still crackles.
