Albondigas soup is the kind of bowl that usually takes an afternoon at the stove. Here, the whole pot lives in the slow cooker instead: rice-and-mint beef meatballs, smoky chipotle tomato broth, carrots, potatoes and zucchini, all layered in and left alone for five unhurried hours on LOW. The meatballs come out cloud-tender, the broth tastes like it simmered all day, and the only real work is rolling 24 small meatballs and dicing a few vegetables.

This is a dump-and-go version of a Mexican classic. Handmade beef meatballs studded with uncooked rice and fresh mint nestle straight into the Crockpot with sliced carrots, diced potatoes, onion, crushed fire-roasted tomatoes, one chipotle in adobo and five cups of beef bone broth. Five hours on LOW does the rest: the rice inside each meatball swells and softens, the vegetables turn silky, and the broth picks up smoke and gentle heat from the chipotle.

In the last half hour, chopped zucchini and a handful of fresh mint go in so they stay bright and intact. Ladle it into warm bowls and finish each one with diced avocado, cilantro, crumbled queso fresco and warm corn tortillas on the side. It is a complete, soul-warming dinner with almost no standing at the stove.

Why this recipe works

The slow cooker suits albondigas better than a stovetop pot ever could. On the stove, meatballs bob in rolling bubbles and either firm up or shed rice into the broth. On LOW, the liquid barely trembles, so the meatballs hold their shape while the rice inside them absorbs broth and swells, acting as the traditional tenderizer.

That same gentle heat turns the onion and tomato into a rounded, smoky base instead of a sharp one, and the chipotle has hours to perfume the whole pot rather than hit it all at once.

Adding the zucchini and fresh mint for only the final 30 minutes is the second key decision. Zucchini dropped in at the start turns to threads after five hours; added late, it keeps a bright edge and a clean bite.

Mint behaves the same way: a long simmer dulls its perfume, but a short one leaves the broth tasting fresh and herbal right up to the table. Timing these two additions separately from the long cook is what keeps the soup tasting layered instead of flat.

Notes and substitutions

Choose ground beef around 85% lean; leaner meatballs dry out over the long cook, and fattier ones leave a slick on the broth. Uncooked long-grain white rice is the classic binder, swelling inside each ball as it cooks.

Fresh mint is not optional here, it is the signature flavor of albondigas, so buy a full bunch and use it in both the meatballs and the finish. Fire-roasted crushed tomatoes bring the smoky backbone; regular crushed tomatoes work, but the roasted ones are worth seeking out.

A 6-quart slow cooker gives the meatballs room to sit in one layer; a smaller oval insert still works if the layer stays snug rather than stacked. One chipotle in adobo from a can seasons the pot gently; keep the rest of the can refrigerated for another use. Crumble the queso fresco with your fingers and dice the avocado just before serving so it stays green. Warm the corn tortillas directly over a gas flame or in a dry skillet for the best texture.

  • ground beef: Ground turkey or ground pork works well; keep the same amount and cook to the same safe internal temperature.
  • chipotle pepper in adobo: Use 1 teaspoon smoked paprika with a pinch of cayenne for smokiness without the heat.
  • beef bone broth: Regular beef broth or a mix of beef broth and water works; taste for salt at the end.
  • queso fresco: Crumbled feta or a spoonful of Mexican crema brings the same creamy, salty finish.
