Tips for success
For the crispiest results, stretch the dough as thin as you can without tearing. The thinner the dough, the more layers you'll create when folding and coiling.
If the dough springs back, let it rest for a few minutes before stretching again. Work with one ball at a time and keep the others covered.
Use a light hand when filling the centers—too much filling can make the pastry soggy. Bake on a preheated baking sheet if possible; the immediate heat helps the bottom crisp up.
Let the börek rest for a few minutes after baking, but serve while still warm. If you have leftovers, reheat in a hot oven to restore the crunch.
Variations
- Spicy Lamb Version: Swap the ground beef for ground lamb and add 1 teaspoon of Aleppo pepper flakes to the filling. The lamb's richness pairs beautifully with the pomegranate molasses, and the heat adds a pleasant kick.
- Vegetarian Mushroom Filling: Replace the beef with finely chopped mushrooms sautéed with onion and garlic. Add a splash of soy sauce and a teaspoon of pomegranate molasses for depth. Cook the mushrooms until dry before filling to avoid a soggy pastry.
- Cheese and Herb Twist: Mix crumbled feta cheese with chopped fresh parsley and dill. Fill the centers with this mixture instead of meat. Bake as directed, but reduce the baking time by 5 minutes since the filling is already cooked.
- Chicken Filling: Use ground chicken instead of beef, and add a pinch of cumin and cinnamon to the filling. Chicken cooks faster, so check the internal temperature reaches 165°F. The spices complement the sweet-tart molasses nicely.
Storage and make-ahead

- Store leftover börek in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to restore crispness.
- Freezer

- Reheat
- Reheat baked börek in a 350°F oven for 5-7 minutes. For frozen baked börek, thaw overnight in the refrigerator before reheating.
Store leftover börek in an airtight container in the refrigerator for up to 3 days. To reheat, place on a baking sheet in a 350°F oven for 5-7 minutes until hot and crisp. Avoid microwaving, which makes the pastry soft.
You can prepare the dough and filling a day ahead. Keep the dough balls covered in the refrigerator, and the filling in a sealed container.
Let the dough come to room temperature before stretching. The filled börek can also be assembled and refrigerated for up to 12 hours before baking—just add a few extra minutes to the baking time.
Serving ideas
Serve the börek warm, ideally within 15 minutes of baking, when the crust is at its crispiest.
A glass of Turkish black tea is the traditional accompaniment, but it also pairs well with a simple salad or yogurt. For a more substantial meal, serve alongside a bowl of lentil soup or a fresh herb salad.
The börek can be served as a main course or cut into smaller pieces for an appetizer. If serving as a crowd-pleasing starter, cut each börek into wedges and arrange on a platter. The contrast of crisp pastry and juicy filling makes it a memorable addition to any table.

Crispy Antakya Kaytaz Börek with Spiced Beef

Ingredients
- 4 cups all-purpose flour
- 1 1/2 cups water
- 2 1/4 tsp active dry yeast
- 1 1/2 tsp salt
- 1 cup unsalted butter, melted
- 1 lb ground beef
- 1 medium onion, grated
- 2 tbsp tomato paste
- 1 tsp black pepper
- 3 tbsp pomegranate molasses
Instructions
- In a large bowl, combine the flour, salt, and yeast. Gradually add the water and stir until a soft dough forms. Knead on a lightly floured surface for 5–7 minutes until smooth and elastic. Divide the dough into 6 equal balls. Generously coat each ball with melted butter, then cover and let rest for 30 minutes.
- On a clean, unfloured surface, take one dough ball and press it into a flat disc. Using your hands, gently stretch and pull the dough from the center outward until it becomes paper-thin and almost translucent. If the dough tears, press it back together and continue stretching.
- Brush the stretched dough with a little melted butter. Fold the dough into a long, narrow ribbon by folding the sides toward the center. Then coil the ribbon into a round, flat disc, tucking the end underneath. Repeat with the remaining dough balls. Place the discs on a baking sheet lined with parchment paper.
- In a bowl, combine the ground beef, grated onion, tomato paste, black pepper, and pomegranate molasses. Mix until well blended. The mixture will be moist and fragrant.
- Using your thumb, press a hollow center into each coiled disc, creating a well. Divide the beef mixture evenly among the wells, pressing it down gently to fill the hollow.
- Heat the oven to 390°F (200°C). Bake the börek for 25 minutes, until the pastry is deep golden brown and blistered, and the filling is bubbling. The internal temperature of the beef should reach 160°F (71°C).
- Remove the börek from the oven and let them cool on the baking sheet for 5 minutes. Serve warm, with Turkish black tea on the side.
