Tips for success
For the best crunch, serve the turon within minutes of cooking. The caramel shell may soften as it sits, so it’s best enjoyed fresh.
If you need to keep them warm, place them on a wire rack in a low oven (200°F) for up to 15 minutes, but they are most spectacular right out of the air fryer.
Experiment with the sugar: try coconut sugar for a slightly different flavor, or add a pinch of cinnamon to the coating.
The salted caramel drizzle can be replaced with a simple honey or maple syrup glaze, though the salted caramel is a perfect match for the sweet banana and jackfruit.
Variations
- Chocolate Drizzle: Melt dark chocolate and drizzle over the finished turon along with the salted caramel. The bitter chocolate balances the sweet banana and adds a luxurious finish.
- Spiced Sugar: Add a teaspoon of ground cinnamon or a pinch of nutmeg to the brown sugar coating for a warm, aromatic twist that complements the tropical flavors.
- Coconut Turon: Sprinkle shredded coconut over the buttered rolls before air-frying. The coconut toasts and adds a nutty texture and flavor.
- Cheese-Stuffed Turon: Place a thin slice of mild cheese (like kesong puti or mozzarella) alongside the banana and jackfruit before wrapping. The cheese melts and adds a salty contrast.
Storage and make-ahead
- Fridge
- Store leftover turon in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer to restore crispness.
- Freezer
- Freeze unbaked turon rolls on a baking sheet, then transfer to a freezer bag for up to 1 month. Air-fry from frozen, adding 2-3 minutes to the cooking time.
- Reheat
- Reheat leftover turon in the air fryer at 350°F for 3-4 minutes until crisp and warmed through.
Store leftover turon in an airtight container at room temperature for up to 1 day. They will lose their crispness but can be refreshed in the air fryer at 350°F for 2-3 minutes.
You can assemble the turon rolls up to a day ahead and keep them refrigerated, covered with plastic wrap.
Brush with butter and sugar just before air-frying. Let leftovers cool completely, then keep them covered so they stay moist and full of flavor.
Serving ideas
Serve the turon warm, drizzled with salted caramel, and optionally with a scoop of vanilla ice cream.
The contrast of hot, crispy shell and cold, creamy ice cream is delightful. For a more traditional approach, skip the caramel and serve with a dusting of confectioners’ sugar.
These rolls also work well as a party appetizer — cut them into bite-sized pieces and serve with toothpicks. The caramelized exterior makes them a stunning addition to any dessert table.

Crispy Air-Fryer Turon with Caramelized Banana and Jackfruit

Ingredients
- 2 ripe saba bananas, halved lengthwise
- 30 g sweet jackfruit strips
- 40 g dark muscovado sugar (about 3 tbsp)
- 8 thin spring roll lumpia wrappers
- 2 tbsp unsalted butter, melted
- 2 tbsp brown sugar, for dusting
- Salted caramel, for drizzling, to taste
Instructions
- Halve the ripe saba bananas lengthwise. In a bowl, toss the banana halves with the sweet jackfruit strips and dark muscovado sugar until the fruit is evenly coated.
- Lay a lumpia wrapper on a clean surface with a corner pointing toward you. Place a banana half and a few jackfruit strips near the bottom corner. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a dab of water.
- Brush each turon roll with melted butter, then dust generously with brown sugar on all sides.
- Preheat the air fryer to 380°F (193°C). Place the turon rolls in a single layer in the air fryer basket, leaving space between them. Air-fry for 9 minutes, turning halfway through, until the sugar melts and forms a crackling caramel shell.
- Transfer the hot turon to a plate. Drizzle with salted caramel and serve immediately while the shell is shatteringly crisp.
