Tips for success
For extra crispiness, let the salmon cubes sit at room temperature for 10 minutes before cooking (but no longer than 30 minutes).
This helps them cook more evenly. Also, make sure to pat them dry thoroughly before adding the oil and spices — excess moisture is the enemy of crispiness.
If you have time, marinate the seasoned salmon cubes in the refrigerator for 30 minutes to let the flavors penetrate. However, this is optional and the recipe works beautifully without it.
When brushing the glaze, do it quickly to keep the salmon hot, and return them to the air fryer immediately for the final caramelization.
Variations
- Spicy Mango Glaze: Replace the sweet chili sauce with 1/4 cup mango chutney and add 1/2 teaspoon red pepper flakes for a fruity, spicy twist. Omit the sriracha and lime juice, and finish with fresh cilantro instead of scallions.
- Garlic Butter Salmon Bites: After air frying, toss the salmon cubes with a mixture of 2 tablespoons melted butter, 2 cloves minced garlic, and 1 tablespoon lemon juice. Skip the sweet chili glaze and garnish with parsley. Cook for an additional 1 minute to melt the butter.
- Teriyaki Glaze: Mix 1/4 cup teriyaki sauce, 1 tablespoon honey, and 1 teaspoon rice vinegar for the glaze. Brush on and air fry for 2 minutes. Garnish with sesame seeds and sliced green onions.
- Coconut-Lime Salmon Bites: Add 1/2 cup unsweetened shredded coconut to the seasoning mix. For the glaze, combine 1/4 cup coconut milk, 1 tablespoon lime juice, and 1 tablespoon honey. Air fry as directed, then brush with the coconut-lime glaze and serve with a sprinkle of toasted coconut.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 2–3 minutes to restore crispiness.
- Freezer
- Freeze cooked salmon bites in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 2 months.
- Reheat
- Reheat frozen or refrigerated bites in the air fryer at 350°F (175°C) for 3–5 minutes, or until heated through and crispy.
Leftover salmon bites can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them in the air fryer at 350°F (175°C) for 2–3 minutes, or until warm and crispy. Avoid microwaving, as it will make them soggy.
The glaze can be prepared up to 3 days in advance and stored in the refrigerator. The salmon can be cut and seasoned up to 4 hours ahead, but keep it refrigerated until ready to cook. For best results, cook the salmon just before serving.
Serving ideas
These sweet chili salmon bites are incredibly versatile. Serve them over steamed jasmine rice with a side of sautéed greens for a complete meal.
They also make a fantastic appetizer for parties — simply skewer each bite with a toothpick and arrange on a platter.
For a lighter option, serve them in lettuce cups with shredded carrots, cucumber, and a squeeze of lime.
The sweet-spicy glaze pairs beautifully with the cool, crunchy vegetables. You can also add them to a grain bowl with quinoa, avocado, and pickled onions for a satisfying lunch.
