Tips for success
For the crispiest cauliflower, do not skip the initial spray of oil. A light, even coating helps the panko toast to a deep golden brown.
Also, flip the florets halfway through cooking to ensure even browning on all sides. If your air fryer runs hot, check a few minutes early to avoid burning.
When making the glaze, keep the heat at a gentle simmer. High heat can cause the honey to burn and turn bitter. Stir frequently to prevent sticking. The glaze will thicken as it cools, so if it becomes too thick, add a splash of water or rice vinegar to loosen it before tossing.
Variations
- Spicy Garlic: Add 2 minced garlic cloves to the glaze while simmering and increase sriracha to 2 tablespoons. Finish with a sprinkle of red pepper flakes for extra heat.
- Orange Sesame: Replace the rice vinegar with orange juice and add 1 tablespoon orange zest to the glaze. Omit the sriracha for a sweeter, citrusy version.
- Maple-Mustard: Swap honey for maple syrup and add 1 tablespoon Dijon mustard to the glaze. Reduce sriracha to 1/2 teaspoon for a milder, tangy flavor.
- Trail Mix Crunch: Mix 1/2 cup chopped pecans or peanuts into the panko breadcrumbs before coating. This adds extra crunch and nutty flavor.
Storage and make-ahead
- Fridge
- Leftover bites keep in the refrigerator for up to 3 days in an airtight container. Reheat in the air fryer to restore crispness.
- Freezer
- Freeze cooked, unglazed cauliflower bites in a single layer, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat leftovers in the air fryer at 375°F (190°C) for 3-4 minutes until hot and crispy. For frozen bites, air fry at 400°F (200°C) for 8-10 minutes.
Store leftover cauliflower bites in an airtight container in the refrigerator for up to 3 days. They will lose their crispness, but the flavor remains.
To reheat, place them in the air fryer at 375°F (190°C) for 3-4 minutes until hot and re-crisped. Avoid microwaving, which makes them soggy.
The cauliflower can be breaded up to 2 hours ahead and kept in the refrigerator on a wire rack. The glaze can be made up to 3 days ahead and stored in the fridge; warm it gently before tossing. For best texture, air fry the cauliflower just before serving.
Serving ideas
Serve the sticky sesame cauliflower bites as an appetizer with toothpicks or chopsticks. They are also excellent over steamed rice or noodles for a quick main dish.
A side of steamed broccoli or a simple cucumber salad balances the richness. Garnish with extra scallions and sesame seeds if desired.
These bites are best enjoyed hot and fresh, when the crust is at its crunchiest.
If serving at a party, keep them warm in a low oven (200°F / 95°C) for up to 20 minutes, but note that they may soften slightly. For a dipping sauce, offer extra sriracha or a soy-sesame dip on the side.

Crispy Air-Fried Sticky Sesame Cauliflower Bites

Ingredients
- 1 medium head cauliflower, cut into florets
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 cup water
- 2 cups panko breadcrumbs
- 2 tbsp olive oil, for spraying
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tbsp rice vinegar
- 1 tbsp sriracha
- 1 tsp toasted sesame oil
- 1 tbsp toasted sesame seeds
- 2 tbsp sliced scallions
Instructions
- Cut the cauliflower into bite-sized florets, about 1 1/2 inches across. In a large bowl, whisk together the flour, cornstarch, garlic powder, and water until smooth. The batter should be thin enough to coat the florets easily. Place the panko breadcrumbs in a shallow dish.
- Dip each cauliflower floret into the batter, letting any excess drip off, then roll it in the panko breadcrumbs until completely coated. Press the breadcrumbs gently to help them stick. Place the coated florets on a wire rack while coating the rest.
- Preheat the air fryer to 400°F (200°C) for about 3 minutes. While it heats, spray the air fryer basket with a little olive oil to prevent sticking.
- Arrange the coated cauliflower florets in a single layer in the air fryer basket, leaving space between them for air to circulate. Spray the tops lightly with olive oil. Air fry at 400°F (200°C) for 15 minutes, flipping halfway through, until golden brown and crispy.
- While the cauliflower cooks, combine the soy sauce, honey, rice vinegar, sriracha, and sesame oil in a small saucepan. Bring to a simmer over medium heat and cook for 2 minutes, stirring frequently, until the glaze thickens and turns glossy.
- After 15 minutes, check the cauliflower for crispness. If they need more time, air fry for another 2-3 minutes until they are shatteringly crisp and deep golden brown.
- Transfer the hot cauliflower to a large bowl. Pour the warm glaze over the top and toss gently with tongs until every floret is evenly coated.
- Shower the glazed cauliflower with toasted sesame seeds and sliced scallions. Serve immediately while the bites are still crunchy and warm.
