Before you start
Before starting, cut the cauliflower into florets and pat them very dry. Set up three stations: one bowl with the batter, one dish with panko, and a wire rack for coated florets.
Measure all glaze ingredients so they are ready to go. Preheat the air fryer to 400°F (200°C) for 3 minutes. Have a small saucepan for the glaze and a large bowl for tossing ready.

Instructions
Prep and Coat
- Prepare the Cauliflower and BatterCut the cauliflower into bite-sized florets, about 1 1/2 inches across. In a large bowl, whisk together the flour, cornstarch, garlic powder, and water until smooth. The batter should be thin enough to coat the florets easily. Place the panko breadcrumbs in a shallow dish.Look for The batter is smooth and lump-free; the florets are dry and uniform in size.Tip Pat the cauliflower dry before dipping so the batter clings better.
- Coat the FloretsDip each cauliflower floret into the batter, letting any excess drip off, then roll it in the panko breadcrumbs until completely coated. Press the breadcrumbs gently to help them stick. Place the coated florets on a wire rack while coating the rest.Look for Every floret is fully covered with an even layer of panko.Tip Use one hand for wet batter and the other for dry crumbs to avoid clumping.
- Preheat the Air FryerPreheat the air fryer to 400°F (200°C) for about 3 minutes. While it heats, spray the air fryer basket with a little olive oil to prevent sticking.Look for The air fryer is hot and ready.Tip If the air fryer doesn't have a preheat setting, just run it empty for 3 minutes.
At the end of this phase, the batter is smooth and the florets are evenly coated with a thick layer of panko.
The coated florets sit on a wire rack, looking dry and crumbly. The air fryer is preheated and ready. Everything is in place for a quick cooking process.
Air Fry and Glaze
- Air Fry the CauliflowerArrange the coated cauliflower florets in a single layer in the air fryer basket, leaving space between them for air to circulate. Spray the tops lightly with olive oil. Air fry at 400°F (200°C) for 15 minutes, flipping halfway through, until golden brown and crispy.Look for The florets are deep golden and sound hollow when tapped.Tip Work in batches if needed—overcrowding makes them soggy.
- Make the Sticky GlazeWhile the cauliflower cooks, combine the soy sauce, honey, rice vinegar, sriracha, and sesame oil in a small saucepan. Bring to a simmer over medium heat and cook for 2 minutes, stirring frequently, until the glaze thickens and turns glossy.Look for The glaze coats the back of a spoon and bubbles slowly.Tip Keep the heat at a gentle simmer; high heat can burn the honey.
- Check the CauliflowerAfter 15 minutes, check the cauliflower for crispness. If they need more time, air fry for another 2-3 minutes until they are shatteringly crisp and deep golden brown.Look for The crust is hard to the touch and makes a crunch when pressed.Tip If any florets are browning too fast, remove them early.
The florets are deeply golden and crisp, with a hard crust that crackles when touched. The glaze is bubbling and thickened, coating the spoon with a glossy layer. The kitchen smells sweet and savory. The florets are ready to be tossed in the warm glaze.
Toss and Serve
- Toss in the GlazeTransfer the hot cauliflower to a large bowl. Pour the warm glaze over the top and toss gently with tongs until every floret is evenly coated.Look for The florets are glossy and coated but still crisp.Tip Toss quickly—the heat helps the glaze cling without making the crust soggy.
- Garnish and ServeShower the glazed cauliflower with toasted sesame seeds and sliced scallions. Serve immediately while the bites are still crunchy and warm.Look for The sesame seeds stick to the glaze and the scallions add fresh color.Tip Serve right away—the crispness fades as they sit.
The glazed florets are shiny and sticky, with sesame seeds clinging to every surface. The scallions add a fresh green contrast. A bite yields a loud crunch followed by a burst of sweet, salty, and spicy flavor. The dish is ready to serve immediately.
Common mistakes
Avoid overcrowding the air fryer basket; too many florets trap steam and lead to soggy spots. Do not skip the oil spray—it is key for browning and crunch.
Be careful not to overmix the batter; lumps are fine, but overmixing makes it tough. When tossing with the glaze, do it quickly and gently to preserve the crust. If the glaze is too thick, add a teaspoon of water to loosen it.
How to tell it’s done
The cauliflower is done when the crust is deep golden brown and shatteringly crisp. To test, press a floret with tongs—it should feel hard and make a crunching sound.
If you cut into one, the interior should be tender but not mushy. Since there are no raw proteins, no internal temperature check is needed. The glaze is ready when it coats the back of a spoon and has a syrupy consistency.
