Tips for success
For the crispiest skin, dry the chicken thoroughly before seasoning. Any moisture will steam and prevent browning. Scoring the skin in a crosshatch pattern helps render fat faster and keeps the skin flat.
Start in a cold skillet and let the fat render slowly over medium heat. Resist the urge to move the chicken for the first 12 minutes; this allows the skin to develop a deep, even crust.
When building the sauce, keep the heat low to prevent the cream from curdling. Stir gently and scrape up the browned bits from the bottom of the pan—they add immense flavor.
Add the parmesan gradually, stirring until melted. If the sauce seems thin, let it simmer for a few extra minutes to reduce. If it is too thick, loosen with a splash of chicken broth or cream.
Variations
- Creamy Mushroom Tuscan Chicken: Add 8 oz sliced cremini mushrooms along with the garlic. Sauté until golden before adding the cream. The mushrooms add an earthy depth that pairs well with the sun-dried tomatoes.
- Spicy Arrabbiata Twist: Add 1/2 teaspoon red pepper flakes with the garlic for a subtle heat. For more spice, add a pinch of cayenne to the cream sauce. This gives the dish a lively kick without overwhelming the creamy base.
- Dairy-Free Coconut Cream Version: Substitute full-fat coconut cream for the heavy cream and use a dairy-free parmesan alternative. The coconut flavor will subtly change the profile, but it remains creamy and delicious.
- Herb-Roasted Chicken Thighs: Skip the cream sauce and instead roast the chicken thighs in a 400°F (200°C) oven after crisping the skin. Toss the sun-dried tomatoes and spinach with olive oil and lemon zest, then serve alongside the chicken.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of cream or broth to loosen. The chicken skin will lose its crispness upon reheating, but the flavor remains excellent.
The chicken can be seasoned and scored up to a day in advance; keep it covered in the refrigerator. The sun-dried tomatoes can be chopped and the garlic minced ahead of time.
The entire dish can be cooked and then reheated gently, but the skin will soften. For best results, cook the dish fresh and reheat leftovers only once.
Serving ideas
Serve the chicken thighs with a generous spoonful of the creamy sauce over the top. The dish pairs beautifully with crusty bread for sopping up the sauce, or with pasta, rice, or polenta.
A simple green salad with a lemon vinaigrette adds brightness and cuts through the richness. For a low-carb option, serve over sautéed zucchini noodles or cauliflower rice.
Garnish with fresh basil or parsley if desired, though the video does not include it. The sauce is rich, so a light side dish is best. Family-style serving from the skillet is rustic and inviting. Leftovers make a great lunch—shred the chicken and toss with the sauce over pasta or grains.

Crispy Tuscan Sun-Dried Tomato Chicken Thighs

Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 tsp kosher salt
- 1 tsp dried Italian herbs
- 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
- 2 cups baby spinach
- 1 cup heavy cream
- 6 cloves garlic, minced
- 1/2 cup grated parmesan cheese
Instructions
- Pat the chicken thighs dry with paper towels. Score the skin lightly in a crosshatch pattern, being careful not to cut into the meat. Season both sides generously with kosher salt and dried Italian herbs.
- Drain the sun-dried tomatoes and chop them into small pieces. Mince the garlic cloves. Rinse the baby spinach and set aside.
- Place a large cast-iron skillet over medium heat. Arrange the chicken thighs skin-side down in the cold skillet. Cook without moving for 12 minutes, adjusting heat as needed to maintain a gentle sizzle, until the skin is deep golden brown and glass-crisp.
- Flip the chicken thighs with tongs. Cook for 5 minutes on the second side, until the meat is nearly cooked through and the internal temperature reaches 165°F (74°C) when measured with an instant-read thermometer.
- Reduce the heat to low. Add the minced garlic and chopped sun-dried tomatoes to the skillet, stirring for 1 minute until fragrant. Pour in the heavy cream and sprinkle in the grated parmesan. Stir gently, scraping up any browned bits from the bottom of the pan.
- Nestle the chicken thighs back into the sauce, skin-side up. Add the baby spinach in handfuls, stirring until wilted. Simmer gently for 2-3 minutes, spooning the sauce over the chicken, until the spinach is tender and the sauce has thickened slightly.
- Remove the skillet from the heat. Spoon the creamy sauce over the chicken thighs, making sure each piece is well coated. Serve hot, with extra sauce from the pan.
