Tips for success
For the most tender steak bites, choose top sirloin that is well-marbled and cut it yourself rather than buying pre-cubed stew meat. Trimming excess fat is fine, but leave a little for flavor.
If the sauce seems too thin at the end, remove the meat and simmer the sauce on the stovetop for a few minutes to reduce, then return the meat to the pot.
To brighten the dish, add a squeeze of lemon juice or a sprinkle of red pepper flakes just before serving—though the video does not call for it, it is a common optional touch.
For a thicker sauce, mash a few of the sun-dried tomatoes into the cream. Always taste and adjust seasoning after the Parmesan is added, as it can be salty.
Variations
- Chicken Version: Substitute boneless, skinless chicken thighs for the sirloin. Cook on LOW for 4 hours, then shred or leave in chunks. The sauce works beautifully with chicken's mild flavor.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a chopped jalapeño along with the garlic for a gentle heat. The spice cuts through the richness of the cream.
- Mushroom and Onion: Add 8 oz sliced cremini mushrooms and 1/2 diced onion to the Crockpot with the meat. They will soften and add earthy depth to the sauce.
- Low-Carb Option: Serve the steak bites over cauliflower mash or sautéed zucchini noodles instead of potatoes or bread. The sauce is naturally gluten-free and low-carb friendly.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Avoid boiling, which can curdle the cream.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; add a splash of beef broth or cream when reheating to restore the silky texture. Cool the dish to room temperature within 2 hours of cooking before refrigerating.
This recipe is perfect for meal prep. Assemble the ingredients (without the cream, Parmesan, and spinach) in the Crockpot insert and refrigerate overnight. In the morning, place the insert in the slow cooker and cook on LOW for 5 hours, then finish with the cream, cheese, and spinach. The flavors meld even more.
Serving ideas
Serve the creamy Tuscan steak bites over a bed of garlic mashed potatoes to soak up the rich sauce. The potatoes provide a buttery base that complements the tangy sun-dried tomatoes and savory Parmesan.
Crusty ciabatta bread is another excellent choice—tear off a piece and mop up every last drop of the silky cream.
For a lighter side, serve over steamed rice, polenta, or zucchini noodles. The sauce is versatile and clings beautifully to any starch.
Garnish with a few extra shavings of Parmesan and a twist of black pepper, if desired. This dish is hearty enough to be a standalone main course but also pairs well with a crisp green salad.

Creamy Tuscan Garlic Parmesan Crockpot Steak Bites

Ingredients
- 3 lb top sirloin, cut into 1-inch cubes
- 100 g oil-packed sun-dried tomatoes, drained and chopped
- 8 cloves garlic, minced
- 1 tbsp dried Italian herbs
- 1 stick unsalted butter, cut into pieces
- 180 ml beef broth
- 200 ml heavy cream
- 100 g grated Parmigiano-Reggiano
- 100 g fresh baby spinach
Instructions
- Place the cubed top sirloin into the Crockpot. Scatter the chopped sun-dried tomatoes and minced garlic over the meat. Sprinkle with the dried Italian herbs. Dot the butter pieces on top, then pour the beef broth around the edges. Do not stir; the layering keeps the meat moist and lets the flavors meld.
- Cover the Crockpot with the lid. Cook on LOW for 5 hours. Do not open the lid during cooking to keep the heat and steam inside. The meat will become fork-tender as the collagen breaks down in the moist heat.
- After 5 hours, uncover and stir in the heavy cream and grated Parmigiano-Reggiano. Add the fresh baby spinach and stir gently until the spinach wilts and the sauce is creamy and bubbling. Cook for an additional 10–15 minutes on LOW, just until the spinach is tender and the cheese is fully melted.
- Insert an instant-read thermometer into the center of a few steak bites. The internal temperature must reach at least 145°F (63°C) for safe consumption. If not, continue cooking for another 15–20 minutes and check again. Let it rest for 3 minutes before slicing.
- Turn off the Crockpot and let the steak bites rest in the warm sauce for at least 3 minutes. This allows the juices to redistribute through the meat, keeping every bite moist and tender.
- Spoon the creamy Tuscan steak bites and sauce over garlic mashed potatoes or crusty ciabatta bread. Make sure each serving gets a generous amount of the sun-dried tomato and spinach cream.
