Before you start
Before starting, cut the top sirloin into 1-inch cubes, removing any large pieces of fat if you like, but leaving some for flavor. Mince the garlic, drain and chop the sun-dried tomatoes, and cut the butter into small pieces.
Have the beef broth, Italian herbs, heavy cream, grated Parmesan, and baby spinach measured and ready. No need to brown the meat—the slow cooker does all the work.
Ingredients at a glance (9)
- 3 lb top sirloin, cut into 1-inch cubes
- 100 g oil-packed sun-dried tomatoes, drained and chopped
- 8 cloves garlic, minced
- 1 tbsp dried Italian herbs
- 1 stick unsalted butter, cut into pieces
- 180 ml beef broth
- 200 ml heavy cream
- 100 g grated Parmigiano-Reggiano
- 100 g fresh baby spinach
Instructions
Layer and Slow-Cook
- Layer the CrockpotPlace the cubed top sirloin into the Crockpot. Scatter the chopped sun-dried tomatoes and minced garlic over the meat. Sprinkle with the dried Italian herbs. Dot the butter pieces on top, then pour the beef broth around the edges. Do not stir; the layering keeps the meat moist and lets the flavors meld.Look for The Crockpot is filled with seasoned meat, tomatoes, garlic, and butter, with broth pooling at the bottom.Tip Cut the sirloin into uniform 1-inch cubes so they cook evenly. Leave the fat on for extra tenderness.
- Cover and Cook on LOWCover the Crockpot with the lid. Cook on LOW for 5 hours. Do not open the lid during cooking to keep the heat and steam inside. The meat will become fork-tender as the collagen breaks down in the moist heat.Look for After 5 hours, the meat is tender and the sauce is bubbling around the edges.Tip If the Crockpot runs hot, check at 4 hours. The meat should shred easily with a fork.
The Crockpot is filled with seasoned meat, tomatoes, garlic, and butter, with broth pooling at the bottom.
The aroma of garlic and herbs fills the kitchen as the meat simmers. After 5 hours, the meat should be fork-tender and the liquid bubbling. Do not stir during this phase.
Creamy Finish
- Finish the Cream SauceAfter 5 hours, uncover and stir in the heavy cream and grated Parmigiano-Reggiano. Add the fresh baby spinach and stir gently until the spinach wilts and the sauce is creamy and bubbling. Cook for an additional 10–15 minutes on LOW, just until the spinach is tender and the cheese is fully melted.Look for The sauce turns pale golden, the spinach wilts into ribbons, and the cheese melts into the cream.Tip Stir gently to avoid breaking the meat. The sauce will thicken as the cheese melts.
- Check the Meat TemperatureInsert an instant-read thermometer into the center of a few steak bites. The internal temperature must reach at least 145°F (63°C) for safe consumption. If not, continue cooking for another 15–20 minutes and check again. Let it rest for 3 minutes before slicing.Look for The thermometer reads 145°F (63°C) or higher.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip For extra tenderness, cook to 160°F (71°C) if you prefer well-done.
The sauce transforms into a pale golden cream as the Parmesan melts and the spinach wilts. The texture is silky, with the cheese fully incorporated. The spinach is tender but still retains its shape. The sauce should be thick enough to coat a spoon.
Rest and Serve
- Rest the Steak BitesTurn off the Crockpot and let the steak bites rest in the warm sauce for at least 3 minutes. This allows the juices to redistribute through the meat, keeping every bite moist and tender.Look for The sauce settles, and the meat looks glossy and juicy.Tip Resting in the sauce keeps the meat warm without drying it out.
- Serve Over Mashed Potatoes or BreadSpoon the creamy Tuscan steak bites and sauce over garlic mashed potatoes or crusty ciabatta bread. Make sure each serving gets a generous amount of the sun-dried tomato and spinach cream.Look for The creamy sauce pools over the potatoes or soaks into the bread.Tip For a low-carb option, serve over cauliflower mash or zucchini noodles.
The steak bites rest in the warm sauce, soaking up the creamy goodness. The meat is glistening and tender. When served over mashed potatoes or bread, the sauce pools around the base, inviting you to dive in.
Common mistakes
A common mistake is lifting the lid during the 5-hour cook, which releases steam and lowers the temperature, extending the cooking time. Another is adding the cream and Parmesan too early—cream can curdle if cooked for hours.
Also, do not use pre-shredded Parmesan, as it may not melt smoothly. Finally, be careful not to over-stir once the spinach is added; you want the meat to stay intact and the spinach to wilt gently.
How to tell it’s done
The steak bites are done when the internal temperature reaches at least 145°F (63°C) on an instant-read thermometer. The meat should be fork-tender and easily pierced.
The sauce should be thick enough to coat the back of a spoon, and the spinach should be fully wilted but still bright green. Let the dish rest for at least 3 minutes before serving to allow the juices to redistribute.
- Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
