Tips for success

To enhance the flavor of the rice, toast the dry grains in a little butter or oil in the saucepan for two minutes before adding the chicken broth. This simple step adds a rich, nutty undertone to the seasoned rice that complements the savory chicken and creamy queso beautifully.

When shredding the chicken, aim for a mix of larger and smaller shreds. The smaller shreds distribute evenly throughout the rice, ensuring chicken in every single bite, while the larger pieces provide a satisfying, meaty texture that stands up well to the rich cheese sauce.

Variations

  • Spicy Queso Chicken Bake: Stir diced canned jalapeños or green chilies into the seasoned rice before baking to add a fiery kick that cuts through the rich, creamy white queso.
  • Black Bean and Corn Queso Bake: Fold a cup of rinsed black beans and sweet corn kernels into the chicken and rice mixture before baking to add color, sweetness, and extra texture.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze the assembled chicken and rice without the queso for up to 2 months, then thaw and bake before adding fresh queso.
Reheat
Reheat individual portions in the microwave, adding a splash of milk or broth to loosen the rice, or cover with foil and bake at 350°F (175°C) until hot.

Allow any leftover casserole to cool completely at room temperature for no more than two hours before storing. Transfer the leftovers to an airtight container and store them in the refrigerator.

The rice will continue to absorb the moisture from the queso, so the leftovers may be slightly thicker and less saucy than the freshly made dish.

The chicken can be cooked, shredded, and stored in the refrigerator up to a day in advance. The rice can also be cooked ahead of time.

When ready to serve, assemble the cold chicken and rice in the baking dish, increase the baking time by 10 minutes to ensure it heats completely through, then top with the freshly warmed queso.

Serving ideas

Serve this comforting casserole hot, straight from the baking dish, using a large spoon to scoop deep into the layers to capture the seasoned rice, tender chicken, and dripping queso.

Pair it with simple sides like a crisp green salad or warm tortilla chips to balance the rich, creamy texture of the main dish.

For a complete meal, serve the casserole alongside roasted vegetables or a simple corn salad.

The vibrant, fresh flavors of a tomato salsa or a squeeze of fresh lime juice over individual portions can also cut through the richness of the white queso, adding a bright contrast to the savory comfort of the dish.

Frequently asked questions

Can brown rice be used instead of white rice?
Yes, brown rice can be substituted, but it will require more liquid and a longer cooking time to become fully tender before assembly.
Why did the queso turn greasy or split?
Queso splits when it is heated too quickly or baked in the oven for too long. Always warm the queso gently and pour it over the hot casserole right before serving.
Is it possible to use store-bought rotisserie chicken?
Absolutely. Using shredded rotisserie chicken is an excellent shortcut that saves time while still delivering tender, flavorful chicken for the casserole.
Can this casserole be frozen with the queso on top?
It is not recommended to freeze the casserole with the queso, as dairy-based sauces often separate and become grainy upon thawing. Freeze the chicken and rice layer instead.

A glass baking dish filled with golden seasoned rice and shredded chicken, smothered in a thick layer of melted white queso.

Ingredients

  • 1 1/2 lb boneless skinless chicken breasts
  • 2 tbsp taco seasoning blend
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 2 cups white queso dip

Instructions

  1. Season the boneless skinless chicken breasts evenly on both sides with the taco seasoning blend. Heat a skillet over medium heat, add the chicken, and cook for 6 to 8 minutes per side until the internal temperature reaches 165°F (74°C). Remove from heat and set aside to rest.
  2. In a medium saucepan, combine the long-grain white rice and chicken broth. Bring the mixture to a boil over high heat, then reduce the heat to low, cover with a tight-fitting lid, and simmer for 15 to 18 minutes until the liquid is fully absorbed.
  3. Use two forks to shred the cooked chicken breasts into bite-sized pieces. Preheat the oven to 375°F (190°C). In a 9x13-inch glass baking dish, combine the cooked seasoned rice and the shredded chicken, spreading them into an even layer.
  4. Place the glass baking dish in the preheated oven. Bake for 15 to 20 minutes until the chicken and rice are heated completely through and the rice on the top layer begins to turn slightly golden and toasted.
  5. While the casserole is baking, place the white queso dip in a microwave-safe bowl or small saucepan. Heat gently, stirring occasionally, until the queso is warm, fluid, and completely smooth.
  6. Remove the baking dish from the oven. Pour the warm white queso evenly over the baked rice and chicken. Let the casserole sit for 2 minutes as the bubbling cheese sauce settles over the toasted rice grains before scooping and serving.
