Tips for success

For a deeper flavor profile, consider searing the pork chops in a hot skillet for one minute per side before placing them into the slow cooker. This adds a layer of Maillard reaction flavor that enhances the overall richness of the dish. While this adds an extra step, it provides a golden crust on the meat that holds up well during the slow cooking process and contributes to a more complex sauce.

If you enjoy a bit of heat, consider adding a pinch of crushed red pepper flakes or a dash of cayenne pepper when you add the Italian seasoning. These spices complement the creaminess of the sauce without overpowering the delicate flavor of the pork.

You can also add freshly cracked black pepper just before serving to add a bright, sharp contrast to the rich cream cheese base, elevating the final presentation of the dish.

Variations

  • Garlic and Spinach Pork: Add three cloves of minced garlic and two cups of fresh baby spinach during the last 30 minutes of cooking. The spinach wilts into the creamy sauce, adding color and a earthy flavor that pairs perfectly with the lemon and herbs.
  • Lemon Zest Infusion: Add the zest of one whole lemon at the very end of the cooking process when you stir the sauce. This adds a bright, citrusy aroma that cuts through the richness of the cream cheese and enhances the overall flavor profile.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freezing is not recommended as the cream-based sauce may separate and change texture upon thawing.
Reheat
Reheat gently on the stovetop over low heat, adding a splash of water or broth to thin the sauce if necessary.

Store any leftovers in an airtight container to keep the sauce from drying out. The cream-based sauce can sometimes thicken significantly when cooled, so keep this in mind.

Ensure the pork and sauce are placed in the refrigerator within two hours of cooking to maintain food safety. Properly stored, the dish will remain fresh and flavorful for up to three days, making it an excellent option for quick lunches or dinners later in the week.

You can prepare the slow cooker insert with the pork, mushrooms, and seasoning the night before and keep it in the refrigerator. When you are ready to cook, simply take the insert out of the fridge and add the cream cheese block on top. It is best to let the insert sit on the counter for about 20 minutes before turning the slow cooker on to avoid thermal shock to the ceramic insert.

Serving ideas

Serve these creamy pork chops over a bed of fluffy mashed potatoes, steamed white rice, or buttered egg noodles to soak up the rich, flavorful sauce.

A side of roasted green beans or a crisp garden salad with a light vinaigrette provides a refreshing contrast to the richness of the cream cheese and pork, balancing the meal beautifully. These sides are simple to prepare and ensure that every drop of the delicious sauce is enjoyed.

For a more elegant presentation, garnish the finished plate with a sprinkle of fresh chopped parsley or chives. This adds a pop of color and a fresh, herbaceous note that brightens the entire dish.

You can also serve this with a side of crusty bread or garlic toast, which is perfect for wiping the plate clean. The combination of textures from the soft pork and the creamy sauce makes this a comforting meal that feels complete.

Frequently asked questions

Can the cream cheese be replaced with sour cream?
Sour cream can be used, but it should be stirred in during the last 30 minutes of cooking rather than at the beginning. Adding it too early can cause the sauce to become grainy or separate due to the high heat of the slow cooker over an extended period.
Why is the sauce watery after cooking?
If the sauce is too thin, it is likely because the mushrooms released more water than expected or the slow cooker was too large for the amount of ingredients. To fix this, remove the pork and whisk the sauce on the stovetop over medium heat to reduce the liquid until it reaches a thick, creamy consistency.
Is it necessary to brown the pork before slow cooking?
Browning is optional but highly recommended. While the recipe can be made without it, searing the pork chops for one minute per side in a hot pan adds a significant amount of depth and color to the final dish, resulting in a more flavorful sauce and a better texture on the meat.
