Before you start

Before you begin, ensure your slow cooker insert is clean and properly positioned on a heat-resistant surface. Prepare your ingredients by slicing the baby portobello mushrooms into even pieces to ensure they cook at the same rate.

Take the cream cheese out of the refrigerator about 15 minutes before you start so it softens slightly, which helps it melt more evenly during the cooking process. Have your Italian seasoning packet ready to go so you can assemble the dish quickly.

Ingredients at a glance (4)
  • 4 pieces pork chops
  • 8 oz baby portobello mushrooms, sliced
  • 1 packet Italian seasoning
  • 8 oz cream cheese, one block

Instructions

Assembly and layering

  1. Assemble the slow cooker
Place the raw pork chops into the bottom of the slow cooker insert. Distribute the sliced baby portobello mushrooms evenly over the top of the pork. Sprinkle the Italian seasoning packet over the mushrooms and meat to ensure even flavor distribution throughout the dish.
Look for Ensure the pork is in a single layer if possible for even cooking.
Tip If the pork chops are very thick, you may need to increase the cooking time slightly.

The pork chops should be arranged in a single layer at the bottom of the slow cooker. The mushrooms should be scattered evenly over the pork, and the Italian seasoning should be sprinkled across the entire surface.

Ensure the cream cheese block is positioned in the center. Everything should look neat and organized before you secure the lid and begin the slow cooking process to ensure that all ingredients are well-positioned for the heat.

Slow cooking phase

  1. Add the cream base
Place the block of cream cheese directly in the center of the slow cooker on top of the seasoned mushrooms and pork. Cover the slow cooker with its lid and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
Look for The cream cheese will soften and eventually melt into the juices to form a sauce.
Tip Do not stir the contents until the end of the cooking process.

During the cooking time, the mushrooms will release their moisture, and the cream cheese will begin to soften significantly. You should notice a savory, herbaceous aroma filling the kitchen as the flavors meld together.

The pork will gradually cook through in the gentle heat. Avoid the temptation to open the lid, as maintaining a constant temperature is essential for the cream cheese to melt into a smooth and consistent sauce without separating or becoming grainy.

Final sauce preparation

  1. Finish and serve
Once the cooking time is complete, ensure the pork chops have reached an internal temperature of at least 145°F (63°C). Remove the pork from the slow cooker and let it rest for at least 5 minutes. Stir the melted cream cheese and mushroom mixture until smooth, then serve the sauce over the pork.
Look for The sauce should be thick, creamy, and glossy after stirring.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Stirring the sauce vigorously with a whisk or spoon helps emulsify the cream cheese and juices.

After the cooking time, the pork should be tender and the sauce should look creamy and slightly thickened. Use a spoon or whisk to stir the melted cream cheese into the juices until the sauce is completely uniform and glossy. The sauce should coat the back of a spoon. If the sauce appears too thin, continue to stir until it reaches the desired consistency. Check the internal temperature of the pork one final time before serving.

Common mistakes

A common mistake is lifting the slow cooker lid during the cooking process. Every time the lid is opened, heat escapes and the cooking time increases by at least 20 to 30 minutes. Another error is overcooking the pork, which can lead to a dry texture even in a slow cooker. Finally, failing to stir the sauce thoroughly at the end can leave pockets of cream cheese that have not fully emulsified with the mushroom juices and pork drippings.

How to tell it’s done

The pork chops are perfectly done when they are fork-tender and have reached an internal temperature of 145°F (63°C). Because slow cookers vary in heat intensity, use a meat thermometer inserted into the thickest part of the chop to verify the temperature.

The meat should be opaque throughout and slightly pull away from the bone if using bone-in chops. Always allow the pork to rest for at least 5 minutes before serving to ensure the juices redistribute properly.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
