Tips for success

For the best flavor, use fresh lobster tails if you can find them; they have a sweeter, more delicate taste than frozen. If using frozen, thaw them completely and pat them very dry before searing to get a nice golden color.

The garlic should be minced finely so it melts into the butter without burning. Cook it for just 30 seconds before adding the lobster, and keep the heat at medium-high so the lobster sears quickly.

When making the cheese sauce, whisk the milk in slowly and constantly to avoid lumps. If the sauce seems too thick, you can add a splash of extra milk to loosen it.

The cheese should be added gradually, stirring until each addition is melted before adding more. For an extra indulgent touch, you can stir in a spoonful of Dijon mustard or a pinch of cayenne, but the classic version is delicious as is.

Variations

  • Spicy Cajun Lobster Mac: Add 1 teaspoon of Cajun seasoning to the butter when searing the lobster, and stir 1/4 teaspoon of cayenne into the cheese sauce. The heat cuts through the richness and adds a Louisiana-inspired kick.
  • Bacon and Chive Mac: Cook 4 slices of bacon until crisp, crumble, and fold into the mac and cheese along with the lobster. Sprinkle chopped fresh chives over the top before broiling for a savory, oniony finish.
  • Truffle Lobster Mac: Stir 1 teaspoon of truffle oil into the cheese sauce just before folding in the pasta. The earthy aroma of truffle pairs beautifully with the sweet lobster and nutty Gruyère.
  • Smoked Gouda and Lobster: Replace the Gruyère with smoked Gouda for a smoky, deep flavor. The smokiness complements the lobster's sweetness, and the cheese melts just as smoothly.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of milk to restore creaminess.
Freezer
Freeze in an airtight container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a skillet over medium heat with a splash of milk, stirring until hot. For crispy panko, broil for 1-2 minutes after reheating.

Leftover mac and cheese can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place it in a skillet over medium heat with a splash of milk, stirring until hot.

Alternatively, microwave individual portions in 30-second intervals, stirring between. The panko topping will lose its crunch; to re-crisp, place the reheated mac and cheese under the broiler for a minute or two.

You can prepare the mac and cheese up to the point of broiling, then cover and refrigerate for up to 24 hours. When ready to serve, bring it to room temperature for 30 minutes, then broil as directed, adding a few extra minutes if needed. You can also cook the lobster and make the sauce a day ahead, then combine with cooked pasta and refrigerate before broiling.

Serving ideas

Serve this lobster mac and cheese hot, straight from the skillet, for the most dramatic presentation. Scoop generous portions onto plates, making sure to get some of the crunchy panko top in every serving.

A simple green salad with a light vinaigrette is a perfect contrast to the richness, and a glass of crisp white wine like Chardonnay or Sauvignon Blanc complements the creamy sauce and sweet lobster beautifully.

For a special dinner, pair the skillet with roasted asparagus or garlic bread. The dish is rich enough to be a main course, but you could also serve it as a decadent side at a holiday table. If you have leftovers, they make a wonderful lunch the next day, though the panko won't be as crispy. Reheat gently to keep the sauce creamy.

Frequently asked questions

Can this recipe be made without lobster?
Yes, you can omit the lobster and make a classic stovetop mac and cheese. Sear the garlic in the butter and proceed with the sauce. For a similar seafood flavor, you could add cooked shrimp or crab, but the dish will be different. If you skip the lobster, the cooking time reduces slightly, and the dish is still delicious.
Why does the cheese sauce sometimes turn grainy?
Grainy sauce usually happens when the cheese is added to boiling hot liquid or when pre-shredded cheese with anti-caking agents is used. To avoid this, keep the heat low when melting the cheese, add it gradually, and grate the cheese yourself. Also, make sure the roux is smooth before adding the milk, and whisk constantly.
Can this recipe be doubled for a larger crowd?
Yes, you can double all ingredients and use a 12-inch oven-safe skillet or a 9x13-inch baking dish. Increase the cooking time for the sauce slightly, and watch the broiler carefully because a larger surface may brown unevenly. Adjust the baking time if using a dish instead of a skillet.
How can you tell when the lobster is cooked through?
Lobster is cooked when it turns opaque and firm to the touch. The internal temperature should reach 145°F (63°C) on an instant-read thermometer. In this recipe, the lobster is seared for 3 minutes and then broiled briefly, which is enough to cook it through without overdoing it.
What can you use instead of panko for the topping?
If you don't have panko, use fresh breadcrumbs, crushed buttery crackers (like Ritz), or even crushed potato chips for a fun twist. For a gluten-free option, use crushed gluten-free crackers or omit the topping altogether. The topping adds crunch, so it's worth substituting something similar.

Creamy Garlic Butter Lobster Tail Mac and Cheese Skillet

Cast iron skillet with creamy lobster mac and cheese, golden panko crust, and lobster chunks visible.

Ingredients

  • 2 fresh lobster tails (about 300g total), meat removed and chopped
  • 300 g (10 oz) cavatappi pasta
  • 4 tbsp butter, divided
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 2 cups sharp white cheddar, shredded
  • 1 cup Gruyère cheese, shredded
  • 1/2 cup panko breadcrumbs
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the cavatappi and cook until al dente according to package directions. Drain and set aside. Meanwhile, pat the chopped lobster meat dry. In an 8-inch cast iron skillet over medium-high heat, melt 2 tablespoons of the butter. Add the garlic and cook for 30 seconds until fragrant. Add the lobster meat and sear for 3 minutes, stirring occasionally, until opaque and lightly golden. Remove the lobster from the skillet and set aside.
  2. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the flour and whisk constantly for 1 minute to make a roux. Slowly pour in the milk while whisking to avoid lumps. Continue whisking until the sauce thickens and is smooth, about 3–4 minutes. Reduce the heat to low and add the shredded white cheddar and Gruyère. Stir until the cheeses are fully melted and the sauce is glossy and thick.
  3. Add the drained cavatappi and the seared lobster meat to the skillet with the cheese sauce. Gently fold everything together with a wooden spoon or spatula until every spiral is coated in the sauce and the lobster is evenly distributed. Season with salt and black pepper to taste.
  4. Sprinkle the panko breadcrumbs evenly over the top of the mac and cheese in the skillet. Use your fingers or a spoon to press the crumbs lightly into the surface so they stick.
  5. Preheat the broiler to high. Place the skillet on an oven rack about 6 inches from the heat source. Broil for 3–5 minutes, watching closely, until the panko is deeply golden and crunchy. Remove the skillet from the oven and let it stand for 2 minutes before serving.
