Tips for success
For a deeper flavor profile, consider adding a pinch of red pepper flakes when layering the ingredients.
This adds a subtle warmth that balances the richness of the heavy cream and the sweetness of the sun-dried tomatoes without making the dish spicy.
If the sauce appears too thick after shredding, stir in a splash of pasta cooking water. This helps adjust the consistency and adds a bit of starch, which helps the sauce cling better to the rigatoni noodles, creating a more professional finish.
Variations
- Spicy Version: Add one teaspoon of red chili flakes during the layering phase for a subtle heat that complements the sun-dried tomatoes.
- Vegetable Boost: Incorporate sliced mushrooms or artichoke hearts along with the sun-dried tomatoes to add extra texture and earthy flavor to the sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days in the refrigerator.
- Freezer
- Freeze the chicken and sauce mixture in a freezer-safe bag for up to 1 month.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or water to restore the sauce's creamy consistency.
Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container.
This ensures food safety and prevents the growth of bacteria. Store the chicken and sauce separately from the pasta if possible, as the pasta will absorb the sauce over time.
You can prepare the sauce base by combining the sun-dried tomatoes, garlic, and cream in a container the night before. Keep it refrigerated, then simply pour it over the chicken in the crockpot when you are ready to start cooking the next day.
Serving ideas
Serve the dish in warmed bowls to keep the creamy sauce at the perfect temperature.
A generous dusting of extra parmesan and a scattering of fresh basil leaves on top adds a vibrant pop of color and a fresh, herbal aroma that cuts through the richness of the sauce.
Pair this meal with a side of crusty garlic bread or a simple green salad with a light vinaigrette.
The acidity of a fresh salad provides a welcome contrast to the creamy pasta, creating a well-rounded and satisfying dining experience for your family or guests.
