Tips for success
To achieve the ultimate glossy pasta sauce, always reserve about a cup of the starchy pasta cooking water before draining the linguine. If the cream sauce becomes too thick after adding the pasta and cheese, splash in a few tablespoons of this warm pasta water.
The starch acts as a natural emulsifier, helping to loosen the sauce while maintaining a velvety, cohesive texture that clings beautifully to the noodles instead of thinning it out.
Allowing the seasoned chicken to sit with the Cajun spices for just ten minutes before cooking helps the flavors penetrate deeper into the meat. When searing, resist the urge to move the chicken strips around constantly.
Letting them sit undisturbed in the hot skillet for a couple of minutes ensures a beautiful, caramelized crust forms, which locks in moisture and adds a wonderful texture to the finished dish.
Variations
- Spicy Shrimp Cajun Pasta: Swap the chicken breast strips for peeled and deveined raw shrimp, searing them for two to three minutes until pink and cooked through.
- Bell Pepper and Onion Cajun Pasta: Sauté sliced red and green bell peppers along with yellow onions alongside the mushrooms for a colorful, sweet crunch.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Cool the dish for no more than 2 hours before refrigerating.
- Freezer
- Freezing is not recommended for this dish, as the heavy cream sauce will separate and turn grainy upon thawing and reheating.
- Reheat
- Reheat gently in a skillet over low heat, splashing in a tablespoon of milk or water to restore the creamy consistency of the sauce.
Store any leftovers in an airtight container in the refrigerator within two hours of cooking to ensure food safety. Because cream-based sauces can separate and become oily when reheated, it is best to consume the leftovers within three days. Do not leave the pasta sitting at room temperature for extended periods, as this promotes bacterial growth.
While this pasta is best enjoyed fresh, the prep work can easily be completed in advance. Slice and season the chicken, slice the mushrooms, and grate the parmesan cheese up to one day ahead, keeping them stored in separate airtight containers in the refrigerator. This reduces the active cooking time significantly, making it incredibly fast to assemble on a busy evening.
Serving ideas
Serve this luxurious Cajun chicken linguine hot, piled high in warmed shallow pasta bowls to help retain the heat of the cream sauce.
Garnish each portion generously with freshly chopped flat-leaf parsley for a vibrant pop of color and a clean, refreshing contrast to the rich flavors. Offer extra grated parmesan cheese on the side so guests can customize the richness of their dish to their liking.
To complement the robust and spicy notes of the Cajun seasoning, pair this meal with a candy, crisp green salad tossed in a light vinaigrette.
A side of warm, crusty garlic bread is also an excellent addition, perfect for scooping up any remaining velvety cream sauce from the bottom of the plate. Keep the beverage pairings light and acidic to balance the decadence of the cream.

Creamy Cajun Chicken Linguine with Mushrooms

Ingredients
- 12 oz linguine
- 1 lb boneless skinless chicken breasts, cut into strips
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 8 oz mushrooms, sliced
- 1 1/2 cups heavy cream
- 1/2 cup parmesan cheese, grated
- 2 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of water to a rolling boil. Add the linguine and cook according to the package directions until al dente. Reserve one cup of the starchy pasta water, then drain the pasta and set it aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breast strips in a single layer. Sear undisturbed for three minutes, then flip and cook until golden-brown and the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside.
- Add the sliced mushrooms to the same skillet with the remaining pan drippings. Sauté over medium heat for about five minutes, stirring occasionally, until the mushrooms are tender, lightly browned, and have absorbed the flavorful spices from the pan.
- Pour the heavy cream into the skillet with the mushrooms, stirring to scrape up any browned bits from the bottom. Bring to a gentle simmer over medium-low heat. Stir in the grated parmesan cheese until completely melted and the sauce begins to thicken.
- Return the seared chicken strips to the skillet. Add the drained linguine and toss everything together until thoroughly coated in the cream sauce. If the sauce is too thick, add a splash of the reserved pasta water. Garnish with chopped fresh parsley before serving.
