Tips for success
To elevate the flavor of the cream sauce, always use fresh garlic rather than pre-minced garlic from a jar. Fresh garlic contains natural oils that release a much sweeter, more intense aroma when sautéed in butter, whereas jarred garlic can introduce an acidic, metallic taste to the delicate cream.
Sauté the garlic just until it becomes fragrant, which takes about one minute, and immediately pour in the heavy cream to stop the cooking process and prevent the garlic from burning and turning bitter.
If the cream sauce begins to look dry or starts to separate as it sits, use a splash of the reserved pasta water to restore its creamy consistency. Add the starchy water one tablespoon at a time while tossing the pasta over low heat.
The starch in the water acts as a natural emulsifier, binding the fat from the butter and cream with the liquid, which instantly smooths out the sauce and helps it adhere beautifully to the linguine without thinning out the rich flavor.
Variations
- Chicken and Broccoli Cream Pasta: Replace the shrimp with thin strips of chicken breast, searing them in the skillet with butter until fully cooked to 165°F (74°C) before building the garlic cream sauce.
- Spicy Garlic Shrimp Pasta: Add a pinch of red pepper flakes to the butter while sautéing the garlic to infuse the cream sauce with a subtle, warming heat.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- Freezer
- Freezing is not recommended as the cream sauce will separate and become grainy upon thawing.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or water to restore the creamy texture.
Store any leftover shrimp and broccoli pasta in an airtight container in the refrigerator for up to two days. Because seafood spoils quickly and cream-based sauces can separate easily, it is important to cool the leftovers to room temperature for no more than two hours before refrigerating.
Keep in mind that the pasta will continue to absorb the sauce as it sits, so the leftovers will naturally be drier when reheated, requiring a splash of milk or water to restore the creaminess.
This dish is best enjoyed fresh, as cream-based sauces do not hold up well over long periods and can separate when stored. However, prep work can be done ahead of time to save minutes during cooking.
The broccoli can be chopped and the garlic minced up to a day in advance and stored in separate containers in the refrigerator. The shrimp can also be peeled and deveined ahead of time, allowing you to assemble the entire meal in under fifteen minutes.
Serving ideas
Serve this creamy shrimp and broccoli linguine immediately while it is piping hot and the sauce is at its silkiest consistency. Divide the pasta among warm shallow bowls, ensuring each portion gets a generous helping of the succulent seared shrimp and tender broccoli florets. A garnish of finely chopped fresh parsley adds a beautiful pop of color and a clean, refreshing contrast to the rich garlic cream sauce.
To round out the meal, pair this rich pasta with a crisp, green side salad tossed in a light vinaigrette, which provides a refreshing acidity that cuts through the creaminess of the dish. Warm, crusty bread is also an excellent accompaniment, perfect for scooping up any extra garlic cream sauce left on the plate. For beverages, a chilled glass of dry white wine, such as Pinot Grigio or Sauvignon Blanc, complements the seafood and cream beautifully.

Creamy Alfredo Shrimp Linguine with Broccoli

Ingredients
- 8 oz linguine pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp butter, divided
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 2 cups broccoli florets, cut into bite-sized pieces
- 2 tbsp fresh parsley, chopped, for garnish
Instructions
- Bring a large pot of water to a boil. Add the linguine pasta and cook according to the package directions. During the last 3 minutes of cooking, add the broccoli florets to the same pot. Drain the pasta and broccoli together, then set them aside.
- Pat the shrimp dry with paper towels. Melt 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp in a single layer and sear for 2 to 3 minutes per side until pink, opaque, and cooked through to a safe internal temperature of 145°F (63°C). Transfer the cooked shrimp to a plate.
- Reduce the heat to medium and melt the remaining 1 tablespoon of butter in the same skillet. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Let the cream simmer for 3 minutes to thicken slightly.
- Add the cooked linguine, broccoli, and seared shrimp back into the skillet with the garlic cream sauce. Toss everything together over low heat for 1 to 2 minutes until the pasta is thoroughly coated and heated through. Garnish with chopped parsley and serve immediately.
