Tips for success
For the most dramatic swirls, pile all the frosting in the center of the cake first, then spread outward with long, confident strokes and finish with a light touch of the spatula tip, lifting at the end of each pass.
A spatula dipped in hot water and wiped dry glides through the buttercream and leaves ribboned ridges like the ones in the video. If serving straight from the glass dish, warm the slices slightly — ten seconds in the microwave makes the chocolate crumb taste fresh-baked.
Weigh the flour if a scale is on hand: 1 1/2 cups should be about 180 grams, and a heavy hand with the scoop is the most common cause of a dry wacky cake.
Spoon the flour into the cup and level it with a knife instead of scooping directly from the bag. Taste the frosting before spreading and adjust the salt — that quarter teaspoon is what keeps the sweetness from flattening the chocolate underneath.
Variations
- Mocha Swirl: Dissolve one teaspoon of instant espresso powder in the cup of water before mixing. The coffee deepens the chocolate without tasting of coffee, and pairs especially well with the sweet white frosting.
- Cinnamon Snickerdoodle Top: Stir one teaspoon of ground cinnamon into the dry ingredients, then dust the frosted top lightly with cinnamon-sugar just before serving for a warm, bakery-case twist.
- Chocolate Chip Studded: Fold half a cup of semi-sweet chocolate chips into the batter right before baking. They melt into fudgy pockets throughout the crumb and make the cake even more of a chocolate statement.
- Double Chocolate Frosting: Beat a quarter cup of sifted cocoa powder into the finished buttercream for a two-tone-free, all-chocolate cake. Add the cocoa with the powdered sugar and an extra tablespoon of cream to keep the texture billowy.
Storage and make-ahead
- Fridge
- Covered in the dish, the frosted cake keeps 5 days refrigerated; soften slices 15 minutes at room temperature before serving.
- Freezer
- Freeze unfrosted cake up to 2 months, wrapped tightly; thaw overnight in the refrigerator and frost fresh.
- Reheat
- Warm a frosted slice 10–15 seconds in the microwave; the crumb tastes fresh-baked and the frosting turns glossy and soft.
Keep the frosted cake in the dish, loosely covered, in the refrigerator for up to five days; the oil in the sponge keeps it moist far longer than a butter cake would last.
Let slices sit at room temperature for fifteen minutes before serving so the frosting softens and the crumb loosens. Cover the cut face with plastic wrap once a few squares are gone to keep the exposed edges from drying.
Bake the cake up to two days before serving: cool it completely, wrap the whole dish tightly and keep it at room temperature, then frost shortly before serving for the freshest look.
The frosting itself can be made up to three days ahead — store it covered in the refrigerator and rewhip it for two minutes with the hand mixer, adding a teaspoon of cream if needed to bring back the billowy, spreadable texture.
Serving ideas
Serve the cake straight from the square glass dish so everyone sees the layers: dark chocolate crumb under a thick, swirled white top. Cut nine generous squares with a sharp knife wiped clean between slices, and lift each piece out with a small offset spatula so the frosting swirl stays intact on the plate.
A cold glass of milk is the traditional partner, and hot coffee or espresso works beautifully against the sweetness of the frosting. For a slightly dressier plate, add a few whole raspberries alongside the square — their tartness cuts the buttercream — though the cake honestly needs nothing at all beyond the fork and a quiet moment.

Crazy Wacky Cake with Fluffy White Frosting, One Bowl

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 3 tbsp unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 tsp vanilla extract
- 1/3 cup vegetable oil
- 1 tbsp white vinegar
- 1 cup water, cool
- 1/2 cup unsalted butter, softened
- 2 cups confectioners' sugar, sifted
- 2 tbsp heavy cream
- 1 tsp vanilla extract
- 1/4 tsp fine salt
Instructions
- Heat the oven to 350°F (175°C). Rub an 8-inch square glass baking dish with a thin film of vegetable oil, tipping out any excess, or line the bottom with a strip of parchment so the cake releases cleanly after baking.
- Whisk the flour, granulated sugar, cocoa powder, baking soda and kosher salt directly in the ungreased pan if you like, or in a large bowl. Whisk for a full minute so the cocoa and baking soda are evenly distributed and no dark streaks remain.
- With the back of a spoon, press three hollows into the dry mixture: one larger well in the center and two smaller ones on either side. Pour the vanilla extract into one small well, the vegetable oil into the other, and the white vinegar into the big center well.
- Pour the cool water straight over the wells and the dry mixture, then stir with a fork or small whisk until the batter is completely smooth, about one minute. A few tiny lumps are fine; keep scraping the corners of the dish so no dry flour hides there.
- Scrape the batter level with a spatula and bake on the center rack for 30 to 35 minutes, until a toothpick poked in the middle comes out with only a few moist crumbs attached and the top springs back when pressed gently.
- Set the dish on a wire rack and let the cake cool fully, at least one hour, before any frosting touches it. A warm sponge melts buttercream into a slick shine instead of holding the tall, fluffy swirls that make this cake look so generous.
- Beat the softened butter with a hand mixer on medium speed for two minutes, until pale and creamy. Add the confectioners' sugar, heavy cream, vanilla extract and fine salt, then beat on low until absorbed and on high for three minutes, until the frosting is white, tall and billowy.
- Pile the frosting onto the cooled cake and spread generously to the corners with an offset spatula or the back of a spoon, lifting and turning as you go to build tall, soft swirls across the top. Slice into nine squares and serve straight from the dish.
