Tips for success
For the crispiest bread, use a generous amount of butter and make sure the griddle is hot before adding the sandwich.
Don't overcrowd the pan—if you're making multiple melts, cook them in batches to keep the heat even. If the bread browns too quickly, lower the heat and give the cheese more time to melt.
To get a perfect cheese pull, use a combination of Swiss and cheddar—the Swiss melts smoothly while the cheddar adds flavor and color.
Let the sandwich rest for just a minute before cutting; this allows the cheese to set slightly without becoming hard. A serrated knife works well for cutting through the crisp crust without squashing the filling.
Variations
- Spicy Patty Melt: Add a few dashes of hot sauce to the thousand island dressing or sprinkle red pepper flakes over the onions for a kick. Use pepper jack cheese in place of the Swiss.
- Mushroom Patty Melt: Sauté 1 cup sliced mushrooms with the onions until golden and add them to the sandwich. This adds an earthy depth and extra juiciness.
- Turkey Patty Melt: Swap the beef patty for a ground turkey patty, seasoned with salt and pepper. Cook to 165°F (74°C). Use provolone or mozzarella for a lighter flavor.
- Breakfast Patty Melt: Top the patty with a fried egg (cook until set) and a slice of bacon. Serve with maple syrup on the side for a sweet-savory twist.
Storage and make-ahead
- Fridge
- Store leftover patty melt in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium heat to restore crispness.
- Freezer
- Freeze the cooked patty melt wrapped tightly in foil for up to 1 month. Thaw overnight in the refrigerator before reheating in a skillet or toaster oven.
- Reheat
- Reheat in a skillet over medium heat for 2-3 minutes per side until hot and crispy, or in a toaster oven at 350°F (175°C) for 5-7 minutes.
Store any leftover patty melt in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium heat to restore crispness, or in a toaster oven. Avoid microwaving, as it makes the bread soggy.
The caramelized onions can be made up to 3 days ahead and stored in the refrigerator. The dressing can also be mixed in advance. When ready to serve, simply reheat the onions in a skillet and proceed with the rest of the recipe.
Serving ideas
Serve the patty melt hot, straight from the griddle, with a side of pickles, potato chips, or a simple green salad.
It's a complete meal on its own, but a bowl of tomato soup or a handful of fries makes it extra comforting. Cut it in half diagonally to show off the cheese pull.
For a diner-style experience, pair it with a fizzy drink or a milkshake. The tangy thousand island dressing and sweet onions balance the richness of the beef and cheese.
This sandwich is best enjoyed immediately, while the bread is still crisp and the cheese is molten.

Classic Diner Rye Patty Melt with Caramelized Onions

Ingredients
- 3 tbsp butter, divided
- 2 sweet Vidalia onions, thinly sliced
- 2 tbsp thousand island dressing
- 1 six-ounce oval beef patty
- 2 slices marble rye bread
- 2 slices Swiss cheese
- 2 slices cheddar cheese
Instructions
- Melt 2 tablespoons of the butter in a large skillet over medium-low heat. Add the sliced sweet Vidalia onions and cook slowly, stirring occasionally, for about 20 minutes, until they turn deep golden brown and jammy. If they start to stick, add a splash of water. Remove the onions to a bowl and set aside.
- In a small bowl, whisk the thousand island dressing until smooth. Set aside.
- Heat a cast-iron skillet or griddle over high heat until very hot, about 450°F (232°C). Place the oval beef patty on the hot surface and smash it down firmly with a spatula. Cook for 2 minutes without moving, until a deep brown crust forms. Flip and cook for another minute on the second side.
- Spread the remaining 1 tablespoon butter on one side of each rye slice. Place one slice, buttered side down, on the griddle. Layer with 1 slice Swiss, the cooked patty, the caramelized onions, the remaining Swiss and the cheddar. Top with the second rye slice, buttered side up.
- Cook the assembled sandwich on the griddle at 350°F (175°C) for about 3 to 4 minutes per side, flipping carefully, until the bread is golden and crisp and the cheese is fully melted. Press gently with a spatula while cooking to help the layers meld.
- Transfer the patty melt to a cutting board. Let it rest for 1 minute, then slice diagonally with a chef's knife. The cheese should pull apart in long, molten strands. Serve hot.
