Tips for success
For the most tender beef, always cook on low rather than high. The low setting allows the collagen in the chuck to break down gradually, producing melt-in-your-mouth shreds.
If you're short on time, high heat will work, but the texture won't be quite as silky. Also, consider browning the beef cubes in a hot skillet before adding them to the slow cooker—it adds a deeper, caramelized flavor, though it's not required.
The sauce thickens as it cools, so if you prefer a thinner sauce, serve immediately. If the sauce seems too thin after shredding, you can simmer the beef in the slow cooker uncovered for 15 to 20 minutes to reduce it.
For extra brightness, stir in a squeeze of lime juice just before serving. And don't forget to taste and adjust the salt—the chipotle and cheese add salt, but you may want a pinch more.
Variations
- Mild version: Use only one chipotle pepper and omit the adobo sauce for a milder heat. Add a teaspoon of smoked paprika to keep some smokiness without the spice.
- Extra smoky: Add 1 teaspoon of liquid smoke or an extra chipotle pepper to intensify the smoky flavor. You can also use smoked cheddar instead of sharp cheddar.
- Chicken version: Substitute boneless, skinless chicken thighs for the beef. Cook on low for 6 to 7 hours, and shred. Ensure the chicken reaches 165°F (74°C) before serving.
- Spicy pineapple salsa: Stir in a cup of fresh pineapple salsa (diced pineapple, red onion, jalapeño, cilantro, lime juice) after shredding for a fresh, bright contrast.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the cooled beef barbacoa in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, or in the microwave in 30-second intervals.
Store leftover beef barbacoa in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. When reheating, add a splash of water or broth to loosen the sauce, and warm gently on the stovetop or in the microwave until hot.
This recipe is ideal for meal prep. You can assemble the uncooked ingredients in the slow cooker insert, cover, and refrigerate for up to 24 hours before cooking. When ready, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve the beef barbacoa over cilantro-lime rice, as shown, or use it to fill tacos, burritos, or quesadillas.
The creamy, smoky sauce pairs beautifully with warm tortillas, fresh pico de gallo, sliced avocado, and a sprinkle of cotija cheese. For a low-effort side, serve with black beans or a simple green salad.
This dish is also great for feeding a crowd—set up a bar with tortillas, rice, and toppings, and let everyone build their own plates.
The beef stays warm in the slow cooker on the 'keep warm' setting, making it perfect for parties or game day. Leftovers can be repurposed into nachos, stuffed peppers, or a hearty chili.

Chipotle Pineapple Beef Barbacoa in the Crockpot

Ingredients
- 2 1/2 lb beef chuck cubes
- 20 oz pineapple tidbits, drained
- 2 tbsp chipotle peppers in adobo sauce, minced
- 8 oz cream cheese, softened
- 2 cups shredded sharp cheddar cheese
- cilantro-lime rice, for serving
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker in an even layer. Scatter the drained pineapple tidbits over the beef, then add the minced chipotle peppers in adobo. Stir gently to coat the beef with the pineapple and chipotle.
- Place the softened cream cheese in the center of the slow cooker, then sprinkle the shredded sharp cheddar over the top. Do not stir; the cheeses will melt and blend during cooking.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is fork-tender and shreds easily. Do not open the lid during cooking to avoid losing heat. Let it rest for 3 minutes before slicing.
- Once the beef is fully cooked, remove it from the slow cooker to a cutting board and let it rest for at least 3 minutes. Shred the beef with two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the sauce.
- Spoon the hot beef barbacoa over cilantro-lime rice on plates or in bowls. Serve immediately, spooning extra sauce over the top.
