This slow cooker beef barbacoa is the definition of set-it-and-forget-it. Cubes of beef chuck go into the Crockpot with salsa verde, green chiles, cream cheese, and sharp cheddar.
Hours later, you come back to fork-tender, saucy, cheesy shredded beef that needs nothing more than rice or tortillas. It’s the kind of dinner that feels like a fiesta with almost no effort.
Crockpot meals don’t get much simpler than this. You layer raw beef chuck cubes in the slow cooker, pour over tomatillo salsa verde, scatter diced Hatch green chiles, and top it all with cream cheese and sharp cheddar.
Then you cover the pot, walk away, and let the slow cooker work its magic. The result is a rich, tangy, creamy shredded beef that’s perfect over cilantro-lime rice, stuffed into tacos, or spooned onto tostadas. It’s a dinner that feels special but requires just 10 minutes of hands-on time.
Ingredients
- 2 1/2 lb beef chuck cubes
- 1 1/2 cups tomatillo salsa verde
- 1 cup diced Hatch green chiles
- 8 oz cream cheese, softened
- 2 cups shredded sharp cheddar cheese
Why this recipe works
The slow cooker does all the work here. Beef chuck is a well-marbled cut that breaks down beautifully over long, gentle cooking.
As it simmers in the salsa verde, the connective tissue melts into gelatin, leaving the meat so tender it falls apart at the touch of a fork. The low heat also gives the salsa and chiles time to infuse every strand of beef with their bright, roasted flavor.
The cream cheese and cheddar melt into the salsa verde as the beef cooks, creating a creamy, tangy sauce that clings to the meat. Because the cheese is added at the top and not stirred in, it melts gradually, forming a smooth queso-like sauce rather than separating. The result is a rich, indulgent dish that’s still bright from the tomatillos and green chiles.
Notes and substitutions
Beef chuck cubes are ideal here because they have enough fat and connective tissue to stay moist during the long cook. Look for packages labeled “chuck stew meat” or cut a chuck roast into 2-inch pieces yourself.
Salsa verde comes in many heat levels; choose a mild one if you prefer a family-friendly dish, or a hot version for more kick. Hatch green chiles add a mild, earthy heat; if you can’t find them, any canned diced green chiles work.
For the cheese, use block cheddar and shred it yourself. Pre-shredded cheese is coated with anti-caking agents that can make the sauce grainy. Full-fat cream cheese melts more smoothly than reduced-fat. If you want a spicier dish, add a diced jalapeño with the chiles or use pepper Jack instead of cheddar. Serve with warm tortillas, rice, or over nachos.
