Tips for success
For the best texture, use fresh kadayıf that is pliable and not dried out. When tossing with butter, use your hands to ensure every strand is coated. Press the kadayıf firmly into the cups to create compact nests. If the pastry sticks to your fingers, lightly wet your hands with water.
To make the syrup ahead, prepare it and refrigerate it in a sealed container for up to 3 days. Stir before using.
When serving, use a fine grater for the dark chocolate to get delicate shavings that melt slightly on the cold dessert. For a more intense chocolate flavor, use a high-quality dark chocolate with at least 70% cocoa.
Variations
- Orange-Scented: Add 1 teaspoon of orange zest to the milk syrup along with the white chocolate. The citrus brightens the sweetness and complements the pistachios.
- Nut-Free: Omit the pistachios entirely and use a nut-free chocolate spread or extra dark chocolate shavings for the topping. Ensure all ingredients are nut-free.
- Coffee-Kissed: Add 1 tablespoon of instant espresso powder to the milk syrup for a mocha flavor. The coffee deepens the richness and pairs well with chocolate.
- Berry Swirl: Before chilling, swirl a tablespoon of raspberry or strawberry preserves into each cup. The fruit adds a tart contrast to the sweet syrup.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Serve cold. The topping may soften, but the dessert remains delicious.
- Freezer
- Freeze the unbaked kadayıf nests for up to 2 months. Bake from frozen, adding 5 minutes. Do not freeze the assembled dessert.
- Reheat
- If the nests have been refrigerated without syrup, reheat them in a 350°F oven for 5-7 minutes before soaking. The syrup should always be cold.
Store any leftover kadayıf nests in an airtight container in the refrigerator for up to 3 days. The dessert is best enjoyed cold, so serve straight from the fridge.
The topping may soften slightly over time, but the dessert remains delicious. If the nests have been unmolded, keep them covered to prevent drying.
This dessert is perfect for making ahead. Prepare the nests and bake them, then let them cool. Make the syrup and chill it.
When ready to serve, pour the cold syrup over the hot nests (reheat the nests briefly if needed) and chill for at least 2 hours. The dessert can be fully assembled and refrigerated for up to 24 hours before serving.
Serving ideas
Serve the chilled kadayıf nests directly in the coffee cups for a rustic presentation, or gently unmold them onto small plates.
The contrast of the dark chocolate shavings and bright green pistachios makes a beautiful plate. A spoon is the best utensil to cut through the crunchy crust and scoop up the creamy interior.
These desserts are best enjoyed cold, so keep them refrigerated until serving. They pair wonderfully with a cup of strong Turkish coffee or a glass of cold milk. For a special occasion, add a dollop of whipped cream or a scoop of vanilla ice cream on the side, though they are delightful on their own.

Chilled Turkish Kadayıf Dessert with Chocolate and Pistachio

Ingredients
- 400 g kadayıf (shredded phyllo dough)
- 200 g unsalted butter, melted
- 1/2 cup chopped pistachios
- 1 1/2 cups whole milk
- 1/2 cup granulated sugar
- 100 g white chocolate, finely chopped
- 50 g dark chocolate, for grating
- 2 tbsp chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C). In a large bowl, toss the kadayıf strands with the melted butter, using your hands to separate and coat them evenly. Press about 2/3 cup of the buttery kadayıf into each Turkish coffee cup, packing it tightly. Sprinkle a teaspoon of chopped pistachios into each cup and press them into the center. Place the filled cups in a baking dish.
- Bake the kadayıf nests for 20-25 minutes, until they are golden brown and crisp. Remove from the oven and let them cool in the cups for 5 minutes. The nests will firm up as they cool.
- In a small saucepan, combine the milk and sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling. Remove from the heat and add the chopped white chocolate. Stir until the chocolate is completely melted and the syrup is smooth. Let the syrup cool to room temperature, then refrigerate until cold.
- Pour the cold white chocolate milk syrup over the hot kadayıf nests in three stages, allowing each addition to be absorbed before adding the next. The pastry will sizzle as the cold syrup hits the hot surface. Let the nests sit for 10 minutes to absorb the syrup.
- Transfer the soaked kadayıf nests to the refrigerator and chill for at least 2 hours, or until completely cold and set. The chilling allows the syrup to firm up and the flavors to meld.
- Just before serving, grate dark chocolate over the top of each chilled kadayıf nest and sprinkle with the remaining chopped pistachios. Serve directly from the cups or gently unmold onto plates.
