Before you start
Before starting, gather all ingredients and equipment. Preheat the oven to 350°F (175°C). Have ready six Turkish coffee cups or small ramekins and a baking dish large enough to hold them. Melt the butter and let it cool slightly.
Chop the white chocolate and the pistachios. Measure the milk and sugar. Prepare the dark chocolate for grating. The syrup can be made while the kadayıf bakes, but it must be cold before pouring.
Ingredients at a glance (8)
- 400 g kadayıf (shredded phyllo dough)
- 200 g unsalted butter, melted
- 1/2 cup chopped pistachios
- 1 1/2 cups whole milk
- 1/2 cup granulated sugar
- 100 g white chocolate, finely chopped
- 50 g dark chocolate, for grating
- 2 tbsp chopped pistachios
Instructions
Phase 1: Prepare and Bake the Nests
- Prepare the Kadayıf NestsPreheat the oven to 350°F (175°C). In a large bowl, toss the kadayıf strands with the melted butter, using your hands to separate and coat them evenly. Press about 2/3 cup of the buttery kadayıf into each Turkish coffee cup, packing it tightly. Sprinkle a teaspoon of chopped pistachios into each cup and press them into the center. Place the filled cups in a baking dish.Look for The kadayıf strands are evenly coated with butter and hold their shape when pressed.Tip Use a small glass or your fingers to press the kadayıf firmly into the cups so the nests hold together.
- Bake the Kadayıf NestsBake the kadayıf nests for 20-25 minutes, until they are golden brown and crisp. Remove from the oven and let them cool in the cups for 5 minutes. The nests will firm up as they cool.Look for The nests are golden brown and feel crisp to the touch.Tip Do not overbake; they should be golden, not dark brown, to keep a delicate texture.
At the end of this phase, the kadayıf strands are coated with butter and pressed into cups. The pastry should look golden brown and feel crisp when touched.
The cups should hold their shape when removed from the oven. The kitchen smells buttery and toasty.
Phase 2: Make the Syrup and Soak
- Make the White Chocolate Milk SyrupIn a small saucepan, combine the milk and sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling. Remove from the heat and add the chopped white chocolate. Stir until the chocolate is completely melted and the syrup is smooth. Let the syrup cool to room temperature, then refrigerate until cold.Look for The syrup is smooth and has no lumps of chocolate.Tip Cool the syrup completely; pouring cold syrup over hot pastry helps the texture.
- Soak the Kadayıf with Cold SyrupPour the cold white chocolate milk syrup over the hot kadayıf nests in three stages, allowing each addition to be absorbed before adding the next. The pastry will sizzle as the cold syrup hits the hot surface. Let the nests sit for 10 minutes to absorb the syrup.Look for The syrup is absorbed, and the nests look glossy and moist.Tip Pour slowly and evenly to ensure every part of the pastry gets soaked.
The white chocolate milk syrup is smooth and cold. When poured over the hot nests, it sizzles softly. The pastry absorbs the syrup gradually, turning glossy and moist. The cups may look full, but the syrup will be absorbed.
Phase 3: Chill and Finish
- Chill the DessertTransfer the soaked kadayıf nests to the refrigerator and chill for at least 2 hours, or until completely cold and set. The chilling allows the syrup to firm up and the flavors to meld.Look for After chilling, the nests are firm and cold.Tip Chilling for longer, up to overnight, makes the dessert even better.
- Top and ServeJust before serving, grate dark chocolate over the top of each chilled kadayıf nest and sprinkle with the remaining chopped pistachios. Serve directly from the cups or gently unmold onto plates.Look for The dark chocolate shavings and pistachios create a beautiful contrast on the pale pastry.Tip For a dramatic presentation, serve in the coffee cups with a spoon.
After at least 2 hours in the fridge, the dessert is completely cold and set. The top is firm, and the syrup has thickened to a creamy consistency. Grating dark chocolate and sprinkling pistachios over each nest adds a final touch of elegance.
Common mistakes
One common mistake is overbaking the kadayıf, which can make it dry and brittle. Keep an eye on it and remove from the oven as soon as it’s golden. Another is pouring the syrup when it’s too warm; it must be cold to achieve the right texture.
Also, avoid over-soaking the pastry, as it can become mushy. Pour the syrup in stages and let it absorb before adding more. Finally, don’t skip the chilling step; it’s essential for the dessert to set properly.
How to tell it’s done
The kadayıf nests are done when they are golden brown and crisp to the touch. The syrup is ready when the sugar is dissolved and the white chocolate is completely melted, and the mixture is smooth.
After chilling for at least 2 hours, the dessert is set and cold. There is no internal temperature to check, as there are no raw proteins. The nests should hold their shape when spooned, and the syrup should be absorbed, not runny.
