Tips for success
For the cleanest slices, use a long, sharp chef's knife and wipe it with a hot, damp towel between cuts. This prevents the chocolate from cracking or dragging. If you want perfectly uniform bars, measure and mark the slab before cutting.
The bars are quite rich, so slicing them into 1-inch thick pieces is ideal. If you live in a warm climate, keep the bars refrigerated until just before serving, and return any leftovers to the fridge promptly.
To enhance the chocolate flavor, you can add a pinch of sea salt to the melted chocolate before pouring, though this is optional. The roasted almonds in the marzipan layer provide a pleasant crunch; if you prefer a smoother texture, pulse them in a food processor until finely ground.
The candied cherries can be chopped into smaller pieces if you like them distributed more evenly, but halving them creates lovely pockets of color and flavor. Experiment with different nuts or dried fruits to personalize the bars.
Variations
- Orange and Almond: Add 1 teaspoon of orange zest to the marzipan mixture and substitute the cherries with candied orange peel. The citrus brightness complements the dark chocolate beautifully.
- Hazelnut Crunch: Replace the pistachios with finely chopped toasted hazelnuts and use a milk chocolate topping for a sweeter, nuttier profile. Add a layer of crushed praline for extra crunch.
- Raspberry Ripple: Swirl a few tablespoons of seedless raspberry jam into the melted chocolate before pouring. The tartness of the raspberries cuts through the richness of the chocolate.
- Spiced Chocolate: Stir 1/2 teaspoon of ground cinnamon and a pinch of cayenne into the melted chocolate. The warm spice adds depth and a gentle heat that pairs well with the cherries.

The bars can also be kept at room temperature in a cool, dry place for up to 3 days, but refrigeration keeps the chocolate firm and the marzipan fresh. Allow the bars to sit at room temperature for 5-10 minutes before serving to soften slightly for the best texture.

Serving ideas
Serve the bars chilled or at room temperature. For a polished presentation, arrange the bars on a serving platter and dust with a little cocoa powder or powdered sugar just before serving. They pair beautifully with espresso, a glass of red wine, or a scoop of vanilla ice cream. The contrast of bitter chocolate, sweet cherries, and nutty marzipan makes them a satisfying finale to any meal.
For a festive touch, drizzle the finished bars with a little melted white chocolate or sprinkle with crushed pistachios. The bars are also lovely when wrapped in parchment paper and tied with twine for homemade gifts. Because they are quite rich, cut them into smaller pieces if serving after a large meal. The clean snap of the chocolate and the chewy marzipan make each bite a textural delight.

Cherry Marzipan Dark Chocolate Truffle Bars

Ingredients
- 1 1/2 cups almond marzipan
- 1/2 cup shelled pistachios, finely chopped
- 1 cup candied ruby Amarina cherries, halved
- 12 oz 72% dark chocolate, finely grated
- 1/2 cup roasted California almonds, chopped
Instructions
- Place the roasted California almonds on a cutting board and chop them with a sharp chef's knife into small, even pieces. Transfer to a bowl. Then chop the candied ruby Amarina cherries into halves. Set both aside.
- Using a box grater, grate the solid block of 72% dark chocolate into a large bowl to create fine, fluffy chocolate curls.
- Line a metal tray with parchment paper. In a bowl, knead the almond marzipan with the chopped pistachios until evenly distributed. Press the marzipan mixture into the bottom of the tray in an even layer, using your hands or a flat-bottomed cup to smooth it.
- Press the halved candied Amarina cherries evenly across the marzipan layer, cut side down, leaving a little space between each.
- Melt the grated dark chocolate gently in a heatproof bowl set over a pan of barely simmering water, stirring until smooth. Pour the melted chocolate over the marzipan and cherries, spreading it evenly with a spatula to cover completely.
- Refrigerate the tray for at least 2 hours until the chocolate is fully set. Lift the slab from the tray using the parchment paper, then slice into thick bars with a sharp knife. Snap one bar cleanly in half to reveal the layered cross-section.
