Tips for success
For the best browning, make sure the mushrooms are dry before adding them to the hot butter.
Pat them dry with a paper towel if they're damp. Also, don't stir too often—let them sit and develop a golden crust.
Use a sharp chef's knife or rocker knife to slice the flatbread cleanly. If the cheese pulls, let it rest for a minute or two. Serve immediately while the cheese is still molten and the crust is at its crispiest.
Variations
- Add Prosciutto: After baking, drape thin slices of prosciutto over the hot flatbread. The heat wilts the prosciutto slightly, adding a salty, savory contrast to the mushrooms and cheese.
- Spicy Kick: Sprinkle red pepper flakes over the finished flatbread for a touch of heat. The spice pairs well with the earthy mushrooms and sweet balsamic glaze.
- Herb Swap: Replace the fresh thyme with rosemary or sage. Both herbs complement the mushrooms and truffle oil nicely. Use the same amount, finely chopped.
- Vegan Version: Use a dairy-free flatbread, vegan butter, and your favorite dairy-free cheese and ricotta alternatives. Omit the truffle oil if it contains dairy. The balsamic glaze is typically vegan.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven or under the broiler to crisp the crust.
- Freezer
- Freeze the baked flatbread for up to 2 months. Wrap tightly in foil and place in a freezer bag. Reheat from frozen in a 400°F (200°C) oven for 10-12 minutes.
- Reheat
- Reheat in a 400°F (200°C) oven for 5-7 minutes, or until the cheese is bubbling and the crust is crisp. Avoid the microwave, which makes the flatbread soggy.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or under the broiler to restore crispness.
The flatbread is best enjoyed fresh, but leftovers make a tasty lunch when reheated.
The mushrooms can be sautéed up to 2 days ahead and refrigerated. Assemble the flatbread just before baking. The flatbread itself is best baked fresh, but you can prep all the toppings in advance to save time.
Serving ideas
Serve the flatbread hot, straight from the oven, cut into wedges or slices. It pairs wonderfully with a simple green salad dressed with lemon vinaigrette to cut through the richness.
For a heartier meal, serve alongside a bowl of tomato soup or a light minestrone.
This flatbread also makes a fantastic appetizer for a party—cut it into smaller pieces and arrange on a platter.
The truffle oil and balsamic glaze make it feel special, while the familiar flavors keep it approachable. A glass of light red wine or sparkling water with lemon complements it beautifully.

Cheesy Truffle Wild Mushroom Flatbread in 15 Minutes

Ingredients
- 1 large artisan flatbread or naan
- 200 g mixed wild mushrooms (cremini, shiitake, oyster), sliced
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1/2 tsp sea salt flakes
- 1 cup shredded fontina or mozzarella
- 1/2 cup ricotta cheese
- 1 tsp truffle oil
- 2 tbsp balsamic glaze
Instructions
- Heat a large skillet over high heat and add the butter. When the butter is foaming, add the sliced wild mushrooms, minced garlic, fresh thyme leaves, and sea salt flakes. Sauté, stirring occasionally, until the mushrooms are deeply browned, tender, and caramelized, about 5 minutes. Remove from heat and set aside.
- Preheat the oven to 425°F (220°C). If using a pizza stone, place it in the oven while it heats. Otherwise, line a baking sheet with parchment paper.
- Place the flatbread on a work surface. Brush the top lightly with olive oil. Sprinkle the shredded fontina or mozzarella evenly over the surface, leaving a small border. Mound the sautéed mushrooms over the cheese, then dollop the ricotta cheese in small spoonfuls across the top.
- Transfer the assembled flatbread to the preheated pizza stone or baking sheet. Bake for 10 minutes, until the edges are crackling crisp and the cheese is melted and bubbling with golden blisters.
- Remove the flatbread from the oven and immediately drizzle with the truffle oil and balsamic glaze. Slice with a rocker knife or chef's knife, then serve hot, with extra thyme leaves if desired.
