Before you start

Preheat the oven to 425°F (220°C) and place a pizza stone or baking sheet inside to heat. Slice the mushrooms and mince the garlic.

Measure out the remaining ingredients so everything is ready to go. The flatbread should be at room temperature for easier handling.

Ingredients at a glance (10)
  • 1 large artisan flatbread or naan
  • 200 g mixed wild mushrooms (cremini, shiitake, oyster), sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1/2 tsp sea salt flakes
  • 1 cup shredded fontina or mozzarella
  • 1/2 cup ricotta cheese
  • 1 tsp truffle oil
  • 2 tbsp balsamic glaze

Instructions

Sauté and Prep

  1. Sauté the Mushrooms
Heat a large skillet over high heat and add the butter. When the butter is foaming, add the sliced wild mushrooms, minced garlic, fresh thyme leaves, and sea salt flakes. Sauté, stirring occasionally, until the mushrooms are deeply browned, tender, and caramelized, about 5 minutes. Remove from heat and set aside.
Look for The mushrooms should be golden-brown and glossy, with the butter lightly browned and fragrant.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Do not crowd the pan; work in batches if needed to ensure browning.
  2. Preheat the Oven
Preheat the oven to 425°F (220°C). If using a pizza stone, place it in the oven while it heats. Otherwise, line a baking sheet with parchment paper.
Look for The oven is fully preheated when the temperature reads 425°F (220°C).
Tip A hot stone or baking sheet helps crisp the bottom of the flatbread.

The mushrooms should be deeply browned and tender, with the butter lightly browned and fragrant. The garlic should be softened but not burnt. The oven is preheated and the flatbread is ready to assemble.

Assemble and Bake

  1. Assemble the Flatbread
Place the flatbread on a work surface. Brush the top lightly with olive oil. Sprinkle the shredded fontina or mozzarella evenly over the surface, leaving a small border. Mound the sautéed mushrooms over the cheese, then dollop the ricotta cheese in small spoonfuls across the top.
Look for The flatbread is fully covered with cheese and mushrooms, with ricotta dollops evenly spaced.
Tip Use a light hand with the ricotta—too much can make the flatbread soggy.
  2. Bake the Flatbread
Transfer the assembled flatbread to the preheated pizza stone or baking sheet. Bake for 10 minutes, until the edges are crackling crisp and the cheese is melted and bubbling with golden blisters.
Look for The cheese is bubbling and the crust is deep golden-brown and crisp.
Tip Rotate the flatbread halfway through for even browning.

The flatbread is evenly covered with cheese and mushrooms, with ricotta dollops in place. After baking, the edges are crisp and the cheese is bubbling with golden blisters. The bottom should be firm and crackly.

Finish and Serve

  1. Finish and Serve
Remove the flatbread from the oven and immediately drizzle with the truffle oil and balsamic glaze. Slice with a rocker knife or chef's knife, then serve hot, with extra thyme leaves if desired.
Look for The flatbread is glossy with glaze and fragrant with truffle oil.
Tip Let the flatbread rest for 1 minute before slicing to keep the toppings in place.

The flatbread is drizzled with truffle oil and balsamic glaze, then sliced into wedges. The cheese is still molten, the crust is crisp, and the aroma is intensely savory-sweet.

Take a moment to check the color, texture and aroma before you move on to the next step.

Common mistakes

A common mistake is overcrowding the pan when sautéing mushrooms, which causes them to steam instead of brown. Use a large skillet and cook in a single layer.

Another pitfall is overloading the flatbread with too many toppings, which can make it soggy. Use a light hand with the ricotta and don't pile the mushrooms too high.

How to tell it’s done

The flatbread is done when the edges are deep golden-brown and crisp, the cheese is fully melted and bubbling with browned spots, and the mushrooms are caramelized.

The internal temperature of the flatbread itself is not a concern since there are no raw proteins, but the crust should be firm and crackly when lifted.

  • Shellfish: 145°F (63°C) in the thickest part
