Tips for success
For the flakiest results, keep the pastry cold until the moment it goes into the oven.
Chilling the assembled braid for 10–15 minutes before baking helps the butter stay solid, which creates more steam and better layers. If the pastry becomes too soft, pop it in the freezer for a few minutes.
Use a serrated knife to slice the braid cleanly without crushing the flaky layers.
Serve it warm, as the filling is most creamy and the pastry most crisp when fresh from the oven. If making ahead, reheat in a 350°F oven for 5–10 minutes to restore crispness.
Variations
- Mediterranean Twist: Add 1/4 cup crumbled feta and 2 tablespoons chopped sun-dried tomatoes to the filling. Omit sesame seeds and sprinkle with dried oregano before baking.
- Spicy Kick: Stir 1/2 teaspoon red pepper flakes and 1/4 cup chopped pickled jalapeños into the filling. Top with a pinch of smoked paprika instead of sesame seeds.
- Herb Garden: Mix 2 tablespoons chopped fresh basil and 1 teaspoon dried thyme into the filling. Brush with egg wash and sprinkle with poppy seeds instead of sesame.
- Bacon Lover's: Add 1/2 cup cooked, crumbled bacon to the filling. Omit sesame seeds and sprinkle with cracked black pepper before baking.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze the unbaked braid for up to 2 months. Bake from frozen at 400°F, adding 10–15 minutes to the baking time.
- Reheat
- Reheat in a 350°F oven for 5–10 minutes until crisp and hot.
Store leftover braid in an airtight container in the refrigerator for up to 3 days. To reheat, place in a 350°F oven for 5–10 minutes until warmed through and crispy. Avoid microwaving, as it will make the pastry soggy.
You can assemble the braid up to 24 hours in advance and keep it covered in the refrigerator. Brush with egg wash just before baking.
You can also bake the braid fully, let it cool, and refrigerate; reheat in a 350°F oven until hot.
Serving ideas
Serve the braid warm as an appetizer, cut into thick slices. It pairs beautifully with a simple green salad or a bowl of soup for a light lunch. The flaky pastry and creamy filling make it a satisfying snack on its own.
For a festive presentation, place the braid on a wooden board and garnish with fresh herbs like parsley or thyme.
Provide small plates and napkins, as the pastry is delightfully crumbly. This braid is also great for brunch, served alongside fresh fruit and mimosas.

Cheesy Spinach Artichoke Puff Pastry Braid

Ingredients
- 1 sheet puff pastry, thawed
- 200 g cream cheese, softened
- 1 cup frozen chopped spinach, thawed and squeezed dry
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup shredded gruyere cheese
- 1 egg, beaten (for egg wash)
- 1 tbsp sesame seeds
Instructions
- In a medium bowl, combine the cream cheese, spinach, artichoke hearts, and shredded gruyere. Mix until evenly distributed and creamy.
- On a lightly floured surface, roll the puff pastry sheet into a 12x10-inch rectangle. Transfer to a parchment-lined baking sheet.
- Spoon the filling down the center of the pastry in a thick log, leaving about 2 inches on each side.
- Using a sharp knife, cut diagonal strips about 1 inch wide along both sides of the pastry, from the filling to the edge.
- Fold the strips over the filling, alternating from left and right, to create a tight braid. Tuck the ends under.
- Brush the entire braid with the beaten egg, then sprinkle with sesame seeds.
- Bake at 400°F (200°C) for 20–25 minutes, until the pastry is puffed and golden brown and the cheese is bubbly.
- Let the braid cool on the baking sheet for 5 minutes before slicing. Serve warm.
