Tips for success
To achieve the most consistent crackling, try to keep the pork belly as level as possible in the roasting tray. If the meat is uneven, use small balls of aluminum foil to prop up the lower sections so that the skin is perfectly parallel to the oven's heating element.
This ensures that the heat is distributed evenly across the entire surface, preventing some areas from overcooking while others remain pale and soft during the final blistering stage.
The quality of the salt you use can impact the results. While coarse sea salt is recommended for its ability to draw out moisture and form a solid crust, ensure that the grains are large enough to be easily removed after the first roast. If you find small grains of salt stuck in the skin after knocking the crust off, gently brush them away with a dry pastry brush before returning the pork to the oven to prevent overly salty bites.
Variations
- Garlic Infused Roast Pork: Add minced garlic and a pinch of white pepper to the meat side rub for a more aromatic and savory flavor profile that complements the richness of the pork belly perfectly.
- Spicy Mustard Glaze: Mix a teaspoon of chili oil or hot sauce into your yellow mustard dipping sauce to provide an extra kick that pairs beautifully with the crispy, fatty pork skin.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days. The skin will soften over time, so expect the best texture when consumed within the first 24 hours.
- Freezer
- Freezing is not recommended as the delicate, crispy skin texture will be lost upon thawing and reheating.
- Reheat
- Reheat in a preheated oven at 400°F (200°C) for 10-15 minutes until the skin is crisp again. Avoid using a microwave as it will make the skin soggy.
Store any leftovers in an airtight container to maintain the best quality. While the skin is best enjoyed immediately after roasting, any remaining meat can be kept for future use. Ensure the pork is cooled completely for no more than 2 hours before placing it in the refrigerator. Proper storage prevents the meat from absorbing other odors in the fridge and helps keep the remaining fat from turning rancid, preserving the flavor for a short period.
You can perform the seasoning and pricking steps up to 24 hours in advance. Keep the prepared pork in the refrigerator uncovered to help dry out the skin further, which actually improves the final crispiness.
Simply remove the pork from the refrigerator about 30 minutes before you are ready to start the roasting process. This preparation method is excellent for managing your time when hosting guests or preparing a larger meal, as it streamlines the cooking day.
Serving ideas
Serve the crispy roast pork belly by slicing it into bite-sized cubes. Use a heavy, sharp knife to cut through the crackling in one firm motion to keep the skin intact.
Arrange the pieces on a platter, showcasing the beautiful contrast between the golden, blistered skin and the tender, flavorful meat. Providing a small dish of yellow mustard on the side is a traditional way to add a bright, tangy contrast that cuts through the richness of the pork belly.
Consider serving this dish alongside steamed jasmine rice and a side of blanched Chinese greens like bok choy or gai lan. The simplicity of these sides complements the richness of the roast pork without overpowering it.
The combination of the hot, crunchy pork with the cool, fresh vegetables and warm, fluffy rice creates a balanced dining experience. Ensure the pork is served while the skin is still warm and at its peak crispiness for the most enjoyable eating experience.

Authentic Cantonese Crispy Roast Pork Belly with Shattering Skin

Ingredients
- 1 kg pork belly slab
- 1 tsp five-spice powder
- 1 tbsp shaoxing wine
- 1/2 cup coarse sea salt
- yellow mustard for serving
Instructions
- Score the meat side of the pork belly slab with a sharp knife to help seasonings penetrate. Rub the meat side thoroughly with the five-spice powder and shaoxing wine. Keep the skin side dry and free of seasonings. Place the meat in the refrigerator to marinate for at least 30 minutes to ensure a firm texture.
- Prick the pork skin at least 500 times using a meat pricker or a fork to create tiny holes. This allows fat to render out. Crust the skin generously with coarse sea salt. Roast the pork in a preheated oven at 375°F (190°C) for 40 minutes.
- Remove the pork from the oven. Carefully knock off and discard the hardened salt crust. Increase the oven temperature to 475°F (246°C). Return the pork to the oven and broil for 15 minutes or until the skin reaches 145°F (63°C) internally and is puffed into golden blisters. Serve with yellow mustard. Remove from the oven and let the roast rest for at least 3 minutes before slicing.
