Tips for success
To achieve the ultimate creamy texture, always reserve a cup of the pasta cooking water before draining the spaghetti. This starchy water is a secret weapon in pasta cooking.
If your three-cheese sauce becomes too thick or starts to clump when you toss in the pasta, adding a splash of the warm pasta water will help loosen the sauce and create a silky, cohesive emulsion that clings beautifully to the spaghetti. It acts as a natural binder between the fats in the cheese and the starches in the pasta.
When searing the chicken, resist the urge to move the slices around in the skillet too early. Letting the chicken sit undisturbed for the first few minutes allows a proper, blackened crust to form, which locks in the juices and provides that signature smoky Cajun flavor. If the chicken sticks to the pan when you try to flip it, it is not ready yet; give it another thirty seconds to a minute, and it will naturally release from the surface once the crust has formed.
Variations
- Shrimp Cajun Pasta: Swap the chicken breasts for raw peeled shrimp. Season the shrimp with Cajun spices and sear in garlic butter for 2 to 3 minutes per side until pink and cooked through.
- Vegetarian Cajun Spaghetti: Omit the chicken entirely and sauté sliced bell peppers, onions, and mushrooms in the garlic butter before building the creamy three-cheese sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Ensure it cools within 2 hours of cooking.
- Freezer
- Freezing is not recommended as the dairy-heavy cheese sauce will separate and become grainy when thawed.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or cream to restore the smooth texture of the sauce.
To store any leftovers, allow the chicken and spaghetti to cool to room temperature for no more than two hours to ensure food safety. Transfer the pasta and chicken into an airtight container and store it in the refrigerator. Because of the high dairy content in the three-cheese sauce, this dish does not freeze well, as the sauce will likely separate and become grainy upon thawing. For the best taste and texture, consume the refrigerated leftovers within three days.
While this pasta is best enjoyed fresh from the pan, you can easily prep several components ahead of time to save minutes on busy nights. Slice the raw chicken breasts, coat them in the Cajun seasoning, and store them in an airtight container in the refrigerator up to twenty-four hours in advance.
You can also shred the mozzarella, parmesan, and cheddar cheeses ahead of time and keep them mixed in a sealed bag. This prep work reduces the cooking time significantly when you are ready to eat.
Serving ideas
Serve this decadent Cajun garlic butter chicken spaghetti immediately while it is piping hot and the cheese sauce is at its creamiest. Present the pasta in shallow bowls, piling the glossy, cheese-coated spaghetti high in the center.
Arrange the sliced seared Cajun chicken neatly alongside or on top of the pasta, allowing the glistening spices to stand out against the creamy white sauce. A generous sprinkle of finely chopped fresh parsley adds a vibrant pop of green and a clean, refreshing contrast to the rich flavors.
To complement the rich, heavy nature of this three-cheese pasta, pair it with a light, crisp side dish. A simple green salad tossed in a tangy vinaigrette or a plate of roasted lemon-garlic asparagus provides an excellent acidity and freshness that cuts through the creaminess of the sauce.
For bread lovers, warm, crusty garlic bread is a perfect accompaniment, ideal for scooping up any remaining glossy cheese sauce left at the bottom of the bowl at the end of the meal.

Cajun Garlic Butter Chicken Spaghetti: Creamy One-Pan Comfort

Ingredients
- 12 oz spaghetti pasta
- 1 1/2 lb boneless skinless chicken breasts, sliced into strips
- 2 tbsp Cajun seasoning
- 4 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup shredded cheddar cheese
- 2 tbsp fresh parsley, finely chopped
Instructions
- Bring a large pot of salted water to a rolling boil over high heat. Add the spaghetti pasta and cook according to the package instructions until it reaches an al dente texture, which usually takes about 8 to 10 minutes. Drain the pasta thoroughly in a colander, reserving a half cup of the starchy cooking water, then set the drained pasta aside.
- Pat the sliced boneless skinless chicken breasts completely dry with paper towels. Place the chicken strips into a medium bowl and sprinkle them evenly with the Cajun seasoning, tossing thoroughly to ensure every single piece is completely coated with the spices. Keep the seasoned chicken refrigerated until the skillet is fully heated and ready for searing.
- Melt two tablespoons of the unsalted butter in a large skillet over medium-high heat. Add the seasoned chicken slices in a single layer and sear without moving for 3 to 4 minutes to develop a dark crust. Flip and cook for another 3 to 4 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Transfer the chicken to a plate to rest.
- Reduce the skillet heat to medium and add the remaining two tablespoons of unsalted butter to the pan juices. Once melted, add the minced garlic cloves and sauté for about 1 minute, stirring constantly with a wooden spoon or spatula to prevent burning, until the garlic becomes fragrant and lightly golden.
- Pour the heavy cream into the skillet with the garlic and butter, stirring to combine. Bring the mixture to a gentle simmer over medium heat. Gradually whisk in the shredded mozzarella cheese, grated parmesan cheese, and shredded cheddar cheese. Continue to stir constantly until all the cheeses are completely melted, smooth, and bubbling gently.
- Add the cooked spaghetti to the bubbling cheese sauce, tossing gently with tongs to coat every strand. If the sauce is too thick, splash in a little reserved pasta water. Arrange the rested Cajun chicken slices on top of the pasta, garnish with the finely chopped fresh parsley, and serve immediately while hot.
