Tips for success
For the best texture, serve the brookie cups warm. A quick 10-second blast in the microwave revives the gooey center and makes the chocolate chips melty. If you prefer a firmer bite, let them cool completely—they will still be delicious, with a more cake-like texture.
To make ahead, prepare the brownie and cookie doughs separately and refrigerate them for up to 2 days. When ready to bake, let the doughs sit at room temperature for 15 minutes, then assemble and bake as directed.
You can also freeze the unbaked cups in the muffin tin, then transfer to a zip-top bag and bake directly from frozen, adding 2–3 minutes to the baking time.
Variations
- Double Chocolate: Add 1/4 cup of chocolate chips to the brownie batter along with the flour. Use dark chocolate chips in the cookie layer for an extra intense chocolate flavor.
- Nutty Brookie: Fold 1/4 cup of chopped toasted walnuts or pecans into the cookie dough. The nuts add crunch and pair beautifully with the brown butter.
- Peanut Butter Swirl: Drop small spoonfuls of creamy peanut butter onto the brownie layer before adding the cookie dough. Swirl gently with a knife for a marbled effect.
- Mint Chocolate: Add 1/4 teaspoon of peppermint extract to the brownie batter and use mint chocolate chips in the cookie layer. Top with a sprinkle of crushed candy cane for a festive twist.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Let come to room temperature or warm before serving.
- Freezer
- Freeze baked cups in a single layer in a zip-top bag for up to 3 months. Thaw at room temperature or warm in the microwave.

Store leftover brookie cups in an airtight container at room temperature for up to 3 days. They will stay moist and chewy. If you want to keep them longer, refrigerate for up to a week—just bring them to room temperature or warm before serving.
The brookie cups can be assembled up to 24 hours in advance. Prepare the brownie and cookie doughs, fill the muffin tin, and cover tightly with plastic wrap.
Refrigerate until ready to bake. When ready, bake directly from the refrigerator, adding 2–3 minutes to the baking time.
Serving ideas

Arrange them on a platter with a sprinkle of extra flaky sea salt and maybe a few chocolate shavings for a polished look. They pair wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
For a cozy presentation, serve them warm in a bowl with a drizzle of chocolate sauce or a dusting of powdered sugar.
They also make a great addition to a dessert charcuterie board, alongside fresh berries, nuts, and other small treats. However you serve them, these little cups are sure to disappear quickly.

Brown Butter Brookie Cups: Fudgy Brownie & Cookie Bites

Ingredients
- 1/2 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 cup unsalted butter, softened
- 1/2 cup light brown sugar, packed
- 3/4 cup all-purpose flour
- 1/4 tsp baking soda
- 1/2 cup semi-sweet chocolate chips
- Flaky sea salt, for sprinkling, to taste
Instructions
- In a small saucepan, melt 1/2 cup butter over medium heat. Cook, swirling occasionally, until the butter turns golden brown and smells nutty, about 3–4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, whisk the browned butter with cocoa powder, brown sugar, granulated sugar, egg, and vanilla until smooth and glossy. Stir in flour and salt until just combined.
- Spoon about 1 tablespoon of brownie batter into each cup of a 12-cup muffin tin, spreading it evenly over the bottom.
- In another bowl, cream the softened butter and brown sugar until light and fluffy. Add flour and baking soda, mixing until a soft dough forms. Fold in the chocolate chips.
- Scoop a heaping tablespoon of cookie dough and gently press it on top of each brownie layer, covering the surface completely.
- Bake at 350°F (175°C) for 15 minutes, until the edges are caramelized and deep golden brown. The centers will look slightly soft but will set as they cool.
- Remove from the oven and immediately sprinkle with flaky sea salt. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, gently lift the brookie cups out of the muffin tin. Serve warm or at room temperature. For a gooey finish, warm them in the microwave for 10 seconds before serving.
