Tips for success
For the crispiest shells, bake the tacos upright on the baking sheet so the heat circulates evenly. If you have taco holders, they work perfectly.
Let the tacos rest for 2 minutes after baking—this allows the cheese to set slightly and prevents the filling from sliding out. When drizzling the crema, use a spoon to create a zigzag pattern for even coverage. The crema can be made ahead and stored in the refrigerator.
If you prefer extra heat, add a pinch of cayenne or a few dashes of hot sauce to the beef mixture. For a smoky twist, use smoked paprika in place of some of the chipotle. The recipe is easily doubled for a crowd; just use two baking sheets and rotate them halfway through baking. Leftover filling can be stored separately and used for nachos, quesadillas, or stuffed peppers.
Variations
- Chicken Version: Swap the ground beef for ground chicken or turkey. Cook until no longer pink and reaches 165°F (74°C). The flavor will be slightly milder, so consider adding an extra teaspoon of chipotle or a pinch of smoked paprika.
- Veggie Black Bean: Replace the beef with 1 can of black beans, drained and rinsed, and 1/2 cup of corn. Sauté with the onion and garlic, then stir in the tomato paste and chipotle. Cook until heated through. No need to check temperature; it's vegetarian.
- Spicy Chorizo: Use fresh chorizo instead of ground beef. Cook it thoroughly, breaking it into crumbles, until it reaches 160°F (71°C). Omit the salt and reduce the chipotle, as chorizo is already highly seasoned. The result is a spicier, more robust taco.
- Avocado Crema: For a different crema, blend 1 ripe avocado with 1/2 cup sour cream, 1 garlic clove, and a squeeze of lime juice. This adds a fresh, creamy element that complements the smoky beef. Adjust the lime and salt to taste.

The beef filling can be made up to 2 days in advance and stored in the refrigerator. The chipotle crema can also be prepared ahead. When ready to serve, reheat the beef in a skillet over medium heat, then assemble and bake the tacos as directed.
This makes weeknight dinners a breeze. The filling can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the baked tacos immediately after drizzling with crema and sprinkling cilantro. They are best enjoyed hot, when the shells are crisp and the cheese is stretchy.
Pair them with Mexican rice, refried beans, or a simple slaw. For a casual gathering, set up a taco bar with the tacos, extra crema, salsa, and lime wedges. The recipe yields 8 tacos, enough for 4 servings of 2 tacos each.
These tacos are also great for a fun dinner with kids—let them choose their toppings. The chipotle crema adds a nice kick, but you can serve it on the side for those who prefer less heat. The tacos are hearty enough to stand alone, but a side of grilled corn or avocado salad rounds out the meal. For a festive touch, serve with a pitcher of agua fresca or limeade.

Baked Chipotle Beef Tacos

Ingredients
- 1 lb ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 3 tbsp tomato paste
- 2 tbsp chopped chipotle peppers in adobo sauce
- 1/2 cup diced bell pepper
- 8 hard taco shells
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tbsp adobo sauce from chipotle peppers
- 1/4 cup fresh cilantro leaves
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink. Add the diced onion and minced garlic and cook for 2 minutes until fragrant. Stir in the tomato paste, chopped chipotle peppers, and diced bell pepper. Cook for 3 minutes, stirring constantly, until the beef is coated in a glossy dark-red glaze. The beef should be fully cooked and reach 160°F (71°C).
- Spoon the beef mixture evenly into the taco shells, about 2 tablespoons per shell. Place the filled shells on a baking sheet, standing upright. Sprinkle the shredded cheddar cheese over the beef, dividing it evenly among the shells.
- Preheat the oven to 400°F (200°C). Bake the tacos for 18 minutes, until the cheese is melted and bubbly and the edges of the shells are golden brown. Remove from the oven and let cool for 2 minutes.
- In a small bowl, stir together the sour cream and adobo sauce until smooth. Drizzle the chipotle crema over the hot tacos and scatter fresh cilantro leaves on top. Serve immediately.
