Tips for success
For the crispiest shells, use corn tortillas and make sure they are well warmed before filling. A quick toast on a dry skillet gives them a head start.
Also, don't overload with sauce—the crema is meant to be a finishing drizzle, not a drowning.
If you want extra heat, add a pinch of cayenne to the beef or top with sliced jalapeños before baking. For a smoky twist, use smoked paprika instead of regular. The recipe is forgiving—feel free to adjust the spices to your taste.
Variations
- Chicken Version: Swap ground beef for ground chicken or turkey. Cook to 165°F (74°C). The spices and chipotle glaze work beautifully with poultry; just be sure not to overcook, as lean poultry can dry out.
- Veggie Bean Filling: Replace the beef with a mix of black beans, corn, and diced zucchini. Sauté with the same spices and chipotle, and skip the meat. Bake as directed—the filling will be hearty and satisfying.
- Extra Smoky: Add 1 teaspoon of smoked paprika and a pinch of cayenne to the beef. Use a generous amount of chipotle in adobo. The result is a deeper, smokier heat that pairs well with a cooling crema.
- Cheesy Crunch Topping: After baking, sprinkle crushed tortilla chips over the melted cheese and return to the oven for 2 minutes. This adds an extra layer of crunch and salty flavor.
Storage and make-ahead
- Fridge
- Store leftover tacos in an airtight container in the fridge for up to 3 days. The crema keeps in a separate container for up to 5 days.
- Freezer
- Freeze baked tacos in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat

Baked Chipotle Beef Tacos: Crispy, Cheesy, One-Dish

Ingredients
- 2 lb ground beef
- 1 medium onion, diced
- 2 tsp garlic paste
- 2 tsp paprika
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp black pepper
- 2 tbsp tomato paste
- 2 tbsp chopped chipotle peppers in adobo sauce
- 1 cup diced bell peppers
- 12 corn tortillas (6-inch)
- 2 cups shredded cheddar or Monterey Jack cheese
- 1/2 cup sour cream
- 1 tbsp fresh lime juice
- 1 tsp minced chipotle in adobo
- 1/4 cup fresh cilantro leaves
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 5-7 minutes. Add the diced onion, garlic paste, paprika, cumin, coriander, and black pepper. Continue cooking for 2-3 minutes until the onion softens and the spices are fragrant.
- Stir in the tomato paste, chopped chipotle peppers in adobo, and diced bell peppers. Cook for 2-3 minutes, stirring constantly, until the mixture is glossy and the beef is coated in a dark-red glaze. Remove from heat.
- Preheat the oven to 400°F (200°C). Warm the corn tortillas briefly in the microwave or on a dry skillet to make them pliable. Spoon the beef mixture into each tortilla and stand them upright in a 9x13-inch baking dish, packing them snugly side by side.
- Sprinkle the shredded cheese evenly over the tops of the tacos. Bake for 18 minutes, until the cheese is melted and bubbly with browned spots and the taco shells are crisp and golden.
- While the tacos bake, stir together the sour cream, lime juice, and minced chipotle in adobo in a small bowl until smooth. Set aside.
- Drizzle the chipotle lime crema over the hot tacos, then scatter with fresh cilantro leaves. Serve immediately while the shells are crisp.
