Tips for success
For the best texture, use a heavy-bottomed skillet that distributes heat evenly. A cast-iron or carbon steel pan works beautifully, as it holds heat well and helps the eggs cook gently.
If you are using a nonstick skillet, be careful not to overheat it, as that can cause the eggs to cook too quickly. Always use a silicone or wooden spatula to fold the eggs, as metal can scratch the surface of nonstick pans.
The key to creamy eggs is to fold them slowly and gently, pushing the cooked edges toward the center. This allows the uncooked egg to flow to the edges and set, creating large, tender curds.
Stop folding while the eggs are still slightly underdone, because the residual heat of the skillet will finish cooking them. If you prefer your eggs more well done, continue folding for another 30 seconds, but be careful not to dry them out.
Variations
- Spicy Menemen: Add 1/2 teaspoon of red pepper flakes or a finely chopped fresh chili with the peppers for a spicy kick. You can also use a spicier pepper variety, such as jalapeño, in place of the Anaheim.
- Cheesy Menemen: Stir in 1/4 cup of shredded mozzarella or a handful of grated kashar cheese along with the eggs for an extra gooey, indulgent version. Reduce the beyaz peynir to 20 grams to balance the salt.
- Herb-Forward Menemen: Increase the fresh parsley to 1/4 cup and add a tablespoon of chopped fresh dill or mint with the eggs. The herbs brighten the dish and add a garden-fresh aroma.
- Tomato-Free Menemen: Replace the tomatoes with 1 cup of roasted red peppers, chopped, and a splash of water. The sauce will be sweeter and less acidic, with a slightly different texture.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat, adding a splash of water if needed.
- Freezer
- Freezing is not recommended as the texture of the eggs and sauce will suffer. For best results, make fresh.
- Reheat
- Reheat in a skillet over low heat, stirring gently, until just warmed through. Avoid microwaving, which can make the eggs rubbery.
Menemen is best enjoyed immediately, as the eggs will continue to set and the sauce may become watery upon reheating. If you have leftovers, let them cool to room temperature, then transfer to an airtight container and refrigerate.
Use within 2 days. To reheat, warm gently in a skillet over low heat, stirring occasionally, until just heated through. Do not microwave, as it can make the eggs rubbery.
You can prepare the tomato-pepper sauce up to 2 days ahead. Cook the tomatoes and peppers as directed, then let cool and refrigerate in an airtight container. When ready to serve, reheat the sauce in a skillet over medium heat, then proceed with adding the eggs. This makes a quick and easy breakfast on busy mornings.
Serving ideas
Serve the menemen directly from the skillet, still bubbling and fragrant. The traditional way is to scoop it up with crusty bread, such as a Turkish simit or a baguette.
Tear off a piece of bread, use it to gather a bit of the egg and sauce, and enjoy. A side of black olives, sliced cucumbers, and fresh tomatoes makes a complete Turkish breakfast spread.
Menemen can also be served with a dollop of thick yogurt on the side for a cool contrast. For a heartier meal, pair it with grilled sausages or a simple green salad. It is satisfying enough to serve for lunch or dinner, too. The dish is versatile and forgiving, so feel free to adjust the amount of spice or the ratio of eggs to sauce to suit your taste.

One-Skillet Turkish Menemen with Eggs and Feta

Ingredients
- 2 tbsp extra-virgin olive oil
- 150 g ripe Roma tomatoes, diced
- 50 g Anaheim green peppers, sliced
- 1 tsp sweet paprika
- 1 tsp dried oregano
- 3 large eggs, lightly beaten
- 40 g beyaz peynir or feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
Instructions
- Heat the olive oil in a 10-inch skillet over medium heat. Add the sliced Anaheim peppers and cook, stirring occasionally, until they begin to soften, about 2 minutes. Add the diced Roma tomatoes, sweet paprika, and dried oregano. Stir to combine and let the mixture cook for another minute, until the tomatoes start to release their juices.
- Reduce the heat to low and let the tomato mixture simmer gently, uncovered, for 4 minutes. Stir occasionally. The sauce should thicken and become jammy, with the tomatoes breaking down into a cohesive mixture. If it looks too dry, add a splash of water.
- Pour the lightly beaten eggs over the simmering tomato mixture. Using a spatula, gently fold the eggs into the sauce, pushing the cooked edges toward the center. Continue folding for 90 seconds, until the eggs are just set but still creamy and moist. Do not over-stir.
- Remove the skillet from the heat. Sprinkle the crumbled beyaz peynir or feta cheese evenly over the top, then scatter the chopped fresh parsley. Serve immediately, directly from the skillet, with crusty bread for scooping.
