Tips for success
For a slightly spicier version, increase the amount of red pepper flakes or add a small pinch of cayenne pepper during the tomato reduction phase.
The heat from the pul biber is a signature element of Turkish menemen, so do not be afraid to adjust it to your personal preference for warmth. Always taste the sauce before adding the eggs to ensure the salt level is perfectly balanced to your liking.
Serving the menemen immediately while it is still bubbling in the pan is essential for the best texture. The residual heat from the copper pan keeps the dish warm as you eat. If you are serving a larger group, you can prepare the tomato and pepper base in advance, keeping it warm, and then add the eggs and cheese right before you are ready to serve to ensure everything is cooked fresh.
Variations
- Sausage Menemen: Add thin slices of spicy sucuk sausage to the skillet with the peppers. Sauté until the sausage releases its oils before adding the tomatoes to build a richer, meatier flavor profile.
- Herb-Infused Menemen: Stir in a tablespoon of finely chopped fresh parsley or dill right before serving. The addition of fresh herbs provides a bright, aromatic lift that complements the richness of the eggs and cheese.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 2 days.
- Reheat
- Gently reheat in a skillet over low heat until warmed through, being careful not to overcook the eggs.
If you have leftovers, allow the dish to cool for no more than two hours before transferring it to an airtight container. Keep the container in the refrigerator for up to two days.
Note that the texture of the eggs and cheese will change slightly upon reheating, so it is best enjoyed fresh. If stored, ensure it is sealed tightly to prevent the absorption of other odors from the refrigerator.
You can prepare the tomato and pepper stew base up to one day in advance. Keep it in the refrigerator and reheat it in your skillet until it is bubbling before proceeding with the egg and cheese steps. This technique saves significant prep time on busy mornings while still allowing you to enjoy the fresh, runny eggs and melted cheese that define this classic Turkish breakfast dish.
Serving ideas
Serve the menemen directly in the skillet, placed on a heat-proof mat in the center of the table. This presentation is traditional and keeps the dish warm throughout the meal.
Provide individual plates or bowls, but encourage everyone to dip their bread straight into the communal pan to fully appreciate the experience. The combination of the warm tomato sauce and the runny egg yolks is best enjoyed with plenty of fresh, crusty Turkish bread.
Pair the menemen with a side of fresh cucumber and tomato salad, black olives, and a wedge of feta cheese to complete the traditional breakfast spread. A glass of hot, freshly brewed Turkish tea is the classic accompaniment to this meal.
The contrast between the warm, savory skillet and the crisp, refreshing sides creates a satisfying meal that is perfect for a slow weekend morning or a special brunch with friends.

Authentic Turkish Menemen Breakfast Skillet

Ingredients
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 3 green sivri peppers, finely diced
- 4 ripe tomatoes, peeled and finely diced
- 1 tsp red pepper flakes (pul biber)
- 1 tsp sea salt
- 3 large eggs
- 1 cup shredded kaşar cheese
Instructions
- Place a copper sahan or skillet over medium heat. Add the butter and olive oil. Once the butter is melted and bubbling, add the finely diced green sivri peppers. Sauté the peppers, stirring occasionally, until they become tender and start to turn sweet, which should take about four to five minutes.
- Add the peeled and diced tomatoes to the skillet along with the red pepper flakes and sea salt. Stir well to combine. Allow the mixture to simmer over medium heat for approximately eight minutes, stirring occasionally, until the tomatoes have completely broken down into a thick, luscious, and juicy sauce.
- Use a spoon to create three small wells in the tomato mixture. Crack one large egg into each well. Gently swirl the egg whites into the sauce while ensuring the yolks remain whole. Sprinkle the shredded kaşar cheese over the top, cover the pan with a lid, and cook for three minutes until the whites are set and the cheese is melted. Ensure the egg internal temperature reaches 160°F (71°C).
