Tips for success
For the most dramatic lava effect, serve the cakes within 5 minutes of baking. If you need to hold them, keep them in the ramekins on a cooling rack for up to 10 minutes, but the center will continue to set slightly.
To reheat, place the ramekins back in a 400°F (200°C) oven for 1 to 2 minutes until the centers are warm and flowing again.
The batter can be made ahead and refrigerated for up to 24 hours. Bring it to room temperature for 30 minutes before baking, then bake as directed.
For an extra touch, dust the finished cakes with a little extra matcha powder or serve with a scoop of black sesame ice cream to echo the video's pairing. The earthy sesame flavor complements the matcha beautifully.
Variations
- Dark Chocolate Matcha: Replace the white chocolate with dark chocolate (at least 60% cacao) and reduce the sugar to 2 tablespoons. The bitterness of the dark chocolate pairs beautifully with the matcha, creating a more intense, less sweet dessert.
- Citrus Matcha: Add 1 teaspoon of finely grated yuzu or orange zest to the melted chocolate mixture. The bright citrus notes lift the earthy matcha and add a refreshing aroma. Serve with a dollop of crème fraîche.
- Gluten-Free: Substitute the cake flour with an equal amount of gluten-free all-purpose flour blend. The texture will be slightly more delicate, but the lava center will still flow beautifully. Ensure the blend contains xanthan gum for structure.
- Nutty Matcha: Add 2 tablespoons of finely ground almonds or hazelnuts to the batter along with the flour. The nuts add a subtle crunch and a rich, toasty flavor that complements the matcha. Toast the nuts lightly before grinding for extra depth.
Storage and make-ahead
- Fridge
- Store leftover cakes in the refrigerator for up to 2 days. Reheat gently in the microwave or oven until warm.
- Freezer
- Freeze unbaked batter in ramekins for up to 1 month. Bake from frozen, adding 2-3 minutes to the baking time.
- Reheat
- Reheat refrigerated cakes in the microwave for 15-20 seconds or in a 350°F (175°C) oven for 5 minutes.
These cakes are best enjoyed fresh out of the oven, but leftovers can be stored in the refrigerator for up to 2 days. Keep them in their ramekins, covered with plastic wrap.
To reheat, microwave each ramekin for 15 to 20 seconds, or place in a 350°F (175°C) oven for 5 minutes. The center will be less molten after refrigeration, but the flavor remains delicious.
You can prepare the batter up to 24 hours in advance and keep it covered in the refrigerator. When ready to bake, let the batter sit at room temperature for 30 minutes, then bake as directed. Alternatively, you can freeze the unbaked cakes in their ramekins for up to 1 month. Bake from frozen, adding 2 to 3 minutes to the baking time.
Serving ideas
Serve the matcha lava cakes warm, straight from the oven, for the full emerald flow. Place each ramekin on a small plate, or unmold them for a cleaner presentation.
A scoop of black sesame ice cream is a classic pairing that adds a nutty contrast, but vanilla bean ice cream or lightly sweetened whipped cream also work well. Dust with additional matcha powder just before serving for a vibrant finish.
These cakes are best enjoyed immediately, as the lava sets as they cool. For a dinner party, you can bake them ahead and reheat briefly, but the texture is most dramatic when they come straight from the oven. Pair with a cup of hot green tea or a glass of cold sake for a sophisticated end to a meal.

Emerald Matcha Molten Lava Cakes

Ingredients
- 5 oz white chocolate, chopped
- 1/4 cup unsalted butter, plus more for ramekins
- 2 tbsp ceremonial grade matcha powder, sifted
- 2 large eggs
- 1/4 cup granulated sugar
- 3 tbsp cake flour
Instructions
- Place the chopped white chocolate and butter in a medium microwave-safe bowl. Heat in 20-second bursts, stirring between each, until completely melted and smooth. Let cool slightly. Sift the matcha powder over the melted chocolate and whisk until fully incorporated and no lumps remain.
- In a separate bowl, whisk the eggs and granulated sugar together until pale and slightly thickened, about 1 minute. The mixture should be frothy and light. Pour the egg mixture into the chocolate-matcha mixture and whisk until fully combined.
- Sift the cake flour over the batter and fold gently with a spatula until just combined. Do not overmix; a few small lumps are fine. The batter should be thick and pourable.
- Generously butter the inside of four 6-ounce ramekins. Divide the batter evenly among them, filling each about three-quarters full. Place the ramekins on a baking sheet for easy handling.
- Bake at 400°F (200°C) for exactly 10 minutes. The edges should be set and slightly puffed, while the center remains soft and glossy. Remove from the oven and let rest for 1 minute before serving.
- Carefully run a thin knife around the edge of each ramekin. Invert each cake onto a plate and let it settle for a few seconds. The warm emerald lava will begin to flow as you cut into it. Serve immediately, ideally alongside a scoop of black sesame ice cream.
