Tips for success
To get the absolute cleanest cuts, use a sharp, thin-bladed knife and wipe it clean with a damp paper towel between each slice.
Slicing the pastitsio after it has cooled to room temperature, then reheating individual slices, is a trick used by many home cooks to ensure the layers stay perfectly intact. If reheating, place the slices on a parchment-lined baking sheet and warm them in a moderate oven until heated through.
When assembling the pasta layer, try to align the tubes in the same direction. While this takes a little extra time, it results in a stunning cross-section when the casserole is sliced and served. Additionally, make sure to press the pasta layer down gently but firmly before adding the meat sauce to help create a solid foundation.
Variations
- Pastitsio with Lamb: Substitute ground lamb for the ground beef to create a richer, more traditional flavor profile.
- Vegetarian Pastitsio: Replace the ground beef with a rich mixture of cooked brown lentils and chopped mushrooms.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer

- Reheat
- Reheat slices on a baking sheet at 350°F (175°C) until warmed through.
Store any leftover pastitsio in an airtight container in the refrigerator for up to four days. Alternatively, cover the baking dish tightly with plastic wrap or aluminum foil before refrigerating.
To freeze, slice the completely cooled pastitsio into individual portions, wrap each slice tightly in plastic wrap, then wrap in aluminum foil. Place the wrapped slices in a heavy-duty freezer bag and freeze for up to three months.
This dish is highly suitable for making ahead of time. Assemble the entire pastitsio in the baking dish, cover it tightly with plastic wrap, and refrigerate it for up to twenty-four hours before baking.
When ready to serve, remove the dish from the refrigerator and let it sit at room temperature for thirty minutes to take the chill off, then bake as directed. You may need to add five to ten minutes to the baking time.
Serving ideas
Serve this classic pastitsio warm, sliced into generous square portions. It pairs wonderfully with a crisp, refreshing green salad dressed with red wine vinegar and extra virgin olive oil.
The bright acidity of the salad cuts through the rich, creamy layers of the baked pasta beautifully, providing a balanced and satisfying dining experience. Some crusty bread is also excellent for scooping up any stray sauce.
For a complete Mediterranean feast, accompany the dish with roasted vegetables like zucchini, eggplant, and bell peppers. A light, dry red wine or a crisp white wine makes a wonderful beverage pairing, complementing the savory flavors in the meat sauce. Garnish the plate with a simple sprig of fresh parsley or oregano for a touch of vibrant color and fresh aroma.

Authentic Greek Pastitsio with Creamy Béchamel Crust

Ingredients
- 1 lb tubular pasta
- 1 1/2 lb ground beef
- 2 cups tomato sauce
- 3 cups béchamel sauce, store-bought or made ahead
- 1 1/2 cups grated cheese
Instructions
- Bring a large pot of salted water to a boil. Add the tubular pasta and cook until slightly under al dente. Drain the pasta thoroughly in a colander, then return it to the pot.
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned and cooked through to an internal temperature of 160°F (71°C). Stir in the tomato sauce and simmer for ten minutes until thick.
- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish. Spread the cooked pasta evenly across the bottom of the dish, pressing down gently. Spread the thick meat sauce in an even layer over the pasta to create a solid middle layer.
- Pour the thick béchamel sauce evenly over the meat layer, smoothing the top with a spatula. Sprinkle the grated cheese generously over the entire surface to cover the béchamel completely.
- Place the baking dish in the preheated oven. Bake for forty to forty-five minutes until the top is deeply golden-brown and the edges are bubbling actively.
- Remove the pastitsio from the oven and place it on a wire rack. Let the casserole rest undisturbed for thirty minutes at room temperature before slicing. Slice into neat, tall squares and serve warm.
