Tips for success
For an extra layer of flavor, char your corn tortillas over an open flame for a few seconds before serving. This adds a smoky contrast that pairs beautifully with the tangy lime crema.
If you do not have a gas stove, a dry cast-iron skillet over high heat works perfectly to achieve the same result.
When shredding the chicken, keep the meat within the slow cooker to let it soak up all the flavorful sauce. If you find the sauce is too thick, add a tablespoon of warm water or additional lime juice to reach your desired consistency, but be careful not to dilute the flavor too much.
Variations
- Spicy Chipotle Variation: Add two tablespoons of chopped chipotle peppers in adobo sauce during the initial layering step for a smoky, deep heat that complements the lime perfectly.
- Tex-Mex Loaded Version: Stir in a cup of canned black beans and corn kernels during the final shredding phase for added texture and a heartier, more robust taco filling.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Cool leftovers within 2 hours.
- Freezer
- Store in a freezer-safe container for up to 2 months. Thaw in the refrigerator overnight before reheating.
- Reheat
- Reheat gently in a saucepan over low heat, adding a splash of water or broth to maintain the creamy consistency.
Transfer any leftovers to an airtight container. Cool the chicken to room temperature within 2 hours, then store in the refrigerator for up to three days.
When reheating, add a small splash of water or broth to prevent the creamy sauce from separating or becoming too thick, and warm gently on the stovetop over low heat.
You can prepare the aromatics and measure the spices in advance to save time. The chicken can be cooked up to two days ahead and reheated, though the texture is freshest when served immediately after the final step. If making ahead, add the fresh cilantro only when you are ready to serve.
Serving ideas
Serve this chicken in warm, charred corn tortillas for a classic street-taco experience.
Top with diced avocado for creaminess, cotija cheese for a salty bite, and pickled red onions to cut through the richness of the crema. Provide lime wedges on the side for guests who prefer an extra hit of acidity.
This shredded chicken is also versatile enough to be served over a bed of cilantro-lime rice or inside a crispy quesadilla.
No matter how you plate it, ensure the chicken is served warm to keep the sauce at its most velvety consistency. It makes a fantastic centerpiece for a casual taco bar.
