Tips for success
For the most intense lemon flavor, use a fresh, heavy lemon with glossy skin. If the lemon feels very light, it may be dry inside; choose another. The boiling step is non-negotiable—it transforms the pith from bitter to pleasantly mellow.
After blending, taste the mixture: it should be sweet with a bright lemon zing and no harsh bitterness. If it tastes bitter, the lemon was too large or not boiled enough.
When folding in the dried fruit, use a spatula and make only a few turns. Overfolding can deflate the batter and make the cake dense.
If using sticky dried fruit like dates or figs, toss them in a little flour first to keep them from clumping. The butter slices should be very thin—about 1/8 inch—so they melt quickly and create an even split.
Variations
- Lemon Poppy Seed: Add 2 tablespoons of poppy seeds to the dry ingredients along with the flour. The poppy seeds add a pleasant crunch and nutty flavor that complements the lemon beautifully.
- Gluten-Free: Replace the all-purpose flour with a 1:1 gluten-free baking blend. Ensure the blend contains xanthan gum for structure. Bake as directed; the texture will be slightly more tender.
- Citrus Mix: Replace the whole lemon with a combination of half lemon and half orange or lime. Boil both fruits together for 6 minutes, then blend as directed. Adjust sugar to taste if using lime.
- Nutty Crunch: Fold in 1/2 cup of chopped toasted walnuts or pecans along with the dried fruit. The nuts add a toasty flavor and extra texture that pairs well with the citrus.

Store the loaf cake in an airtight container at room temperature for up to 4 days. The cake stays moist thanks to the lemon puree and oil. If the weather is very warm, you can refrigerate it, but bring to room temperature before serving for the best texture. Wrap in plastic wrap or foil if not using a container.
The cake can be made up to 2 days ahead and stored at room temperature. It also freezes beautifully—wrap the cooled loaf tightly in plastic wrap and then foil, and freeze for up to 3 months.
Thaw overnight in the refrigerator, then let come to room temperature before slicing. The lemon flavor actually deepens slightly after a day.
Serving ideas
Slice the loaf thickly and serve as is, or lightly toast slices for a warm breakfast treat. The cake pairs wonderfully with a cup of tea or coffee.
For a more indulgent dessert, serve with a dollop of whipped cream or a scoop of vanilla ice cream. The dried fruit provides natural sweetness, so no additional glaze is needed.
This loaf is equally at home on a brunch table or as an afternoon snack. It slices neatly and travels well, making it a great choice for picnics or lunchboxes. The bright lemon flavor is refreshing, and the tender crumb is satisfying without being heavy. Enjoy it within a few days for the best texture.

Whole Lemon Dried Fruit Loaf Cake

Ingredients
- 1 large whole lemon
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup whole milk
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup mixed dried fruit (such as raisins, cranberries, chopped apricots)
- 1 tbsp cold butter, sliced thin
Instructions
- Place the whole lemon in a medium saucepan and cover with water. Bring to a boil over high heat, then reduce to a simmer and cook for 6 minutes. Drain and let cool until easy to handle, about 10 minutes. Cut the lemon in half and remove any seeds, then chop into quarters.
- In a blender, combine the boiled lemon (with peel), sugar, eggs, milk, and vegetable oil. Blend on high until the mixture is completely smooth and velvety, about 30 seconds. Scrape down the sides as needed.
- In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Make a well in the center and pour in the blended lemon mixture. Stir with a rubber spatula just until combined—lumps are fine. Fold in the mixed dried fruit.
- Pour the batter into a 9x5-inch loaf pan lined with parchment paper. Smooth the top with a spatula. Lay the thin slices of cold butter down the center line of the batter, from one end to the other.
- Bake in the preheated oven at 320°F (160°C) for 35 minutes, or until a toothpick inserted in the center comes out clean and the top is golden and domed. If the top browns too quickly, tent loosely with foil for the last 10 minutes.
- Let the cake cool in the pan on a wire rack for 10 minutes, then lift out using the parchment and cool completely on the rack. Slice thickly and serve. The crumb should be soft, tender, and moist, with visible dried fruit.
