Tips for success

For the most intense lemon flavor, use a ripe, heavy lemon with thin skin—it will be juicier and more aromatic.

If the lemon is very large, use only three-quarters of it to avoid an overpowering bitterness. Always remove the seeds before blending, as they can add an unpleasant bitter note.

When whisking the batter, use a gentle hand and stop as soon as the flour is incorporated. Overmixing can make the cake tough.

For an extra-smooth glaze, sift the confectioners' sugar before whisking with the lemon juice. If the glaze is too thin, add more sugar a tablespoon at a time until it reaches the desired consistency.

Variations

  • Lemon Poppy Seed: Fold 2 tablespoons of poppy seeds into the batter just before pouring into the pan. The seeds add a delightful crunch and a nutty flavor that complements the lemon perfectly.
  • Lemon Blueberry: Gently fold 1 cup of fresh or frozen blueberries into the batter after mixing. Toss the berries in a little flour first to prevent them from sinking to the bottom.
  • Lemon Glaze with Thyme: Infuse the lemon juice for the glaze with a few sprigs of fresh thyme for 10 minutes before whisking with the sugar. Strain out the thyme for a subtle herbal note.
  • Lemon Olive Oil Cake: Replace the vegetable oil with extra-virgin olive oil for a fruity, peppery flavor. Use a mild olive oil to avoid overpowering the lemon.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature before serving for best texture.
Freezer
Freeze unglazed cake wrapped tightly in plastic wrap and foil for up to 3 months. Thaw overnight in the refrigerator and glaze before serving.
Reheat
Reheat individual slices in the microwave for 15 seconds or in a toaster oven at 350°F for 5 minutes. The glaze may melt if reheated too long.

Store the glazed cake in an airtight container at room temperature for up to 3 days. The glaze may soften slightly but will remain intact.

If the cake is unglazed, it can be stored for up to 5 days. Keep it away from direct sunlight to prevent the glaze from melting.

The cake can be baked a day ahead and kept unglazed in an airtight container. Glaze it just before serving for the best presentation. The glaze can also be made ahead and stored in the refrigerator for up to a week; whisk it before using.

Serving ideas

Serve the cake at room temperature for the best texture and flavor. Slice it thickly with a serrated knife to avoid crushing the tender crumb.

It pairs beautifully with a cup of hot tea or coffee. For an extra touch, add a dollop of whipped cream or a scoop of vanilla ice cream.

This cake is also delicious toasted lightly and spread with a little butter or lemon curd. The glaze adds a sweet-tart contrast that makes each bite crave-worthy. Store any leftovers in an airtight container to maintain freshness.

Frequently asked questions

Can this cake be made without a blender?
Yes, but the lemon needs to be finely minced or grated to achieve a similar texture. Use a microplane to zest the lemon, then juice it, and add the zest and juice to the wet ingredients. The cake will still be flavorful, but the texture will be slightly different.
Why does the cake crack on top?
The crack is a characteristic of pound cakes and occurs when the top sets before the center finishes rising. It's completely normal and actually desirable, as it gives the cake a rustic, homemade look. The crack also provides a perfect channel for the glaze to seep into.
Can this cake be made gluten-free?
Yes, substitute the all-purpose flour with a 1:1 gluten-free flour blend. The texture may be slightly more tender, but the flavor will remain excellent. Be sure to check that the baking powder is gluten-free as well.
How long does the cake stay fresh?
Stored in an airtight container at room temperature, the glazed cake stays fresh for up to 3 days. If unglazed, it can last up to 5 days. The oil in the batter helps keep it moist longer than butter-based cakes.
Can the glaze be made without confectioners' sugar?
Yes, you can make a simple syrup glaze by heating equal parts sugar and lemon juice until the sugar dissolves. However, the consistency will be thinner and more translucent. For a thicker glaze, use powdered sugar.

Whole Lemon Blender Pound Cake: One-Bowl Citrus Loaf

A golden whole lemon blender pound cake with white glaze on a cutting board, one slice cut showing moist crumb.

Ingredients

  • 1 whole organic lemon, unpeeled, seeded and chopped
  • 3 large eggs
  • 1 cup granulated sugar (200g)
  • 1/2 cup whole milk (100ml)
  • 1/2 cup vegetable oil (100ml)
  • 2 cups all-purpose flour (250g)
  • 1 packet baking powder (10g)
  • 1 packet vanilla sugar (5g)
  • 1 cup confectioners' sugar
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving overhang on two sides. Chop the whole organic lemon into wedges, removing any seeds. Place the lemon chunks, eggs, sugar, milk, and oil in a high-speed blender. Blend on high until the mixture is completely smooth and pale yellow, about 30 to 45 seconds.
  2. Pour the lemon puree into a large mixing bowl. Sift the all-purpose flour, baking powder, and vanilla sugar over the top. Whisk gently until just combined, being careful not to overmix. The batter should be smooth and velvety, with no dry lumps.
  3. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 42 minutes, or until the cake is tall, golden brown, and cracked down the center. A toothpick inserted into the thickest part should come out clean or with only a few moist crumbs.
  4. Remove the cake from the oven and let it cool in the pan on a wire rack for 15 minutes. Then lift the cake out using the parchment paper and let it cool completely on the rack before glazing. This step is essential to prevent the glaze from melting into the warm crumb.
  5. In a small bowl, whisk together the confectioners' sugar and fresh lemon juice until the mixture is thick and opaque white. The glaze should fall from the whisk in a thick ribbon. If it's too thick, add a drop more lemon juice; if too thin, add a little more sugar.
  6. Drizzle the glaze generously over the cooled loaf in zigzag patterns, letting it cascade down the sides. Allow the glaze to set for about 10 minutes before slicing. Cut thick slices and serve at room temperature or slightly warm.
