Tips for success
For the best texture, whip the ricotta just until it is silky—overwhipping can make it thin. Use a handheld mixer for the fluffiest result, but a whisk works fine.
If you want a more pronounced garlic flavor, mince one raw garlic clove and stir it into the whipped ricotta before spreading. This adds a sharp kick that complements the sweet roasted garlic.
When roasting the garlic, wrap it tightly in foil to trap steam and keep the cloves moist. Let it cool for a few minutes before squeezing so you do not burn your fingers.
The roasted garlic can be mashed slightly before scattering if you prefer a more spreadable texture. For an extra touch, sprinkle a few fresh thyme leaves over the finished dish for color and fragrance.
Variations
- Herbed Ricotta: Stir 2 tablespoons of chopped fresh chives, parsley, or basil into the whipped ricotta before spreading. This adds a fresh, green note that pairs well with the honey and garlic.
- Spicy Honey: Add a pinch of red pepper flakes to the truffle honey before drizzling. The heat cuts through the richness and adds a subtle kick that balances the sweetness.
- Fig and Prosciutto: Top the assembled fougasse with thin slices of prosciutto and a few fresh fig quarters before drizzling the honey. The salty prosciutto and sweet figs make it a more substantial appetizer.
- Balsamic Glaze: Replace the truffle honey with a high-quality balsamic glaze for a tangy, sweet finish. This works especially well if you use a rosemary-scented fougasse.

Store leftover assembled fougasse in an airtight container in the refrigerator for up to 2 days. The bread will soften, so reheat in a toaster oven or under the broiler for a few minutes to crisp it again. The whipped ricotta and roasted garlic can be stored separately in the fridge for up to 3 days.
The whipped ricotta can be made a day ahead and kept in the refrigerator; let it come to room temperature before spreading. The garlic can be roasted up to 2 days in advance and stored in the fridge.
The fougasse can be baked ahead and reheated briefly before serving, but for the best texture, assemble just before serving.
Serving ideas
This appetizer is best served warm, right after assembly, when the bread is still crackling and the honey is glossy. Tear off pieces by hand and enjoy the contrast of crispy bread, creamy ricotta, sweet garlic, and earthy honey. It pairs beautifully with a crisp white wine or a light cocktail.
For a party, set out the fougasse on a large board with extra honey on the side for drizzling. You can also cut it into smaller pieces for easy finger food.
If you want to make it more substantial, add a handful of arugula or a sprinkle of flaky sea salt just before serving. The recipe is forgiving and adaptable.

Whipped Ricotta Fougasse with Truffle Honey

Ingredients
- 1 cup whole-milk ricotta
- 1 tbsp extra-virgin olive oil
- 1/2 tsp sea salt
- 2 heads garlic
- 2 tbsp black truffle honey
- 1 pre-baked fougasse flatbread (about 8 inches)
- 2 tbsp garlic herb butter, melted
Instructions
- In a medium bowl, combine the ricotta, olive oil, and sea salt. Whip with a whisk or electric hand mixer until silky and airy, about 2 minutes. Set aside. Heat the oven to 400°F (200°C). Slice the top off each garlic head to expose the cloves. Place them on a small piece of foil, drizzle with a little olive oil, and wrap tightly. Roast for 25 minutes until the cloves are golden and soft. Let cool slightly, then squeeze the cloves from their skins.
- Place the truffle honey in a small microwave-safe bowl or a small saucepan. Warm gently just until it is loose and drizzle-able, about 10 seconds in the microwave or 1 minute over low heat. Do not boil.
- Increase the oven temperature to 425°F (220°C). Brush the top and edges of the fougasse generously with the melted garlic herb butter. Place on a baking sheet and bake for 5 to 6 minutes until golden and crackling, with crispy edges and a slightly chewy center.
- While the fougasse is still warm, spread the whipped ricotta generously over the surface. Scatter the roasted garlic cloves evenly over the ricotta. Drizzle the warm truffle honey over the top. Tear into pieces and serve immediately.
