Tips for success
For the most consistent cookies, use a cookie scoop to portion the dough. This ensures even baking and uniform size.
If you don't have a scoop, use two spoons to shape the dough into balls. For a more rustic look, leave the dough slightly craggy rather than smooth.
To keep the cookies soft, store them in an airtight container at room temperature with a slice of bread. The bread releases moisture, keeping the cookies fresh for days.
If you prefer crispier cookies, store them without the bread. You can also reheat them in a 300°F oven for a few minutes to restore the fresh-baked feel.
Variations
- Double Chocolate: Replace 1/4 cup of the flour with 1/4 cup unsweetened cocoa powder and add 1/4 cup chocolate chips to the dough. The cocoa intensifies the chocolate flavor, complementing the espresso.
- Nutty Espresso: Fold in 1/2 cup toasted chopped walnuts or pecans along with the chocolate. The nuts add a crunchy texture and enhance the nutty brown butter flavor.
- Mocha Chip: Use 4 oz bittersweet chocolate and 4 oz white chocolate chunks. The white chocolate adds a creamy sweetness that pairs well with the coffee and dark chocolate.
- Sea Salt Caramel: Press a soft caramel candy (such as a caramel square) into the center of each dough ball before baking. The caramel melts and creates a gooey center, and the flaky sea salt on top balances the sweetness.

Store the cookies in an airtight container at room temperature for up to 5 days. To maintain softness, add a slice of bread to the container.
For longer storage, freeze the baked cookies in a single layer, then transfer to a zip-top bag for up to 3 months. Thaw at room temperature or reheat in a low oven.
The dough can be made ahead and refrigerated for up to 24 hours before baking. This allows the flavors to develop and makes it easy to bake fresh cookies on demand.
You can also scoop the dough into balls and freeze them on a baking sheet, then transfer to a zip-top bag. Bake frozen dough directly from the freezer, adding 1–2 minutes to the baking time.
Serving ideas
Serve these cookies warm with a glass of cold milk or a hot espresso. The contrast of the warm, gooey chocolate with the crisp edges and salty finish is irresistible.
For a more indulgent presentation, sandwich two cookies with a scoop of vanilla ice cream. Or crumble them over a bowl of vanilla ice cream for a quick sundae. The flaky sea salt adds a gourmet touch that makes them feel special, even when served simply.

Brown Butter Espresso Cookies with Flaky Sea Salt

Ingredients
- 1 1/2 cups packed brown sugar
- 1 cup unsalted butter
- 2 tbsp finely ground espresso
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 2 large eggs
- 2 tsp vanilla extract
- 8 oz bittersweet chocolate, chopped
- flaky sea salt, for topping, to taste
Instructions
- Melt the butter in a large skillet over medium heat. Cook, swirling the pan occasionally, until the butter turns golden brown and smells nutty, about 5–7 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the warm brown butter with the brown sugar. Stir until well combined. Add the eggs and vanilla, and mix until smooth.
- Sprinkle the espresso powder, flour, baking soda, and kosher salt over the wet mixture. Stir with a wooden spoon until just combined; do not overmix.
- Add the chopped chocolate and fold gently into the dough until evenly distributed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 24 hours. Chilling helps the flavors meld and prevents spreading.
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Using a cookie scoop or tablespoon, scoop rounded balls of dough (about 1 1/2 tbsp each) onto the prepared baking sheets, spacing them 2 inches apart.
- Bake one sheet at a time for 10–12 minutes, until the edges are golden and the centers are just set. The cookies will look slightly underdone in the middle.
- Remove the baking sheet from the oven and immediately sprinkle the hot cookies with flaky sea salt.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
