Tips for success
For the crispiest croissants, serve them within an hour of filling. If you need to store them, keep the shells unfilled in an airtight container at room temperature for up to 2 days, then reheat in a 350°F oven for 5 minutes to restore crispness.
Fill just before serving. The ganache can be warmed gently to a spreadable consistency if it thickens.
When piping the cream, use a long, thin tip and insert it deep into the croissant to ensure the cream reaches the center.
If you prefer a more intense pistachio flavor, add a few drops of pistachio extract to the diplomat cream. For a decorative touch, sprinkle crushed pistachios on the ganache before it sets.
Variations
- Chocolate Suprême: Replace the pistachio diplomat cream with a chocolate diplomat cream (add 2 oz melted dark chocolate to the pastry cream) and use a dark chocolate ganache. Omit pistachio paste for a classic chocolate version.
- Hazelnut Suprême: Substitute Sicilian pistachio cream with hazelnut pastry cream, and use a hazelnut ganache. Sprinkle chopped toasted hazelnuts on top for extra crunch.
- Berry Suprême: Fold 1/2 cup fresh raspberry puree into the diplomat cream and top with a white chocolate-raspberry ganache. Garnish with fresh raspberries.
- Salted Caramel Suprême: Swirl caramel sauce into the diplomat cream and use a caramel ganache. Sprinkle with flaky sea salt before serving.
Storage and make-ahead
- Fridge
- Store unfilled shells in an airtight container at room temperature; filled croissants can be refrigerated for up to 4 hours but will lose crispness.
- Freezer
- Freeze unfilled, baked shells for up to 2 months. Thaw at room temperature and reheat in a 350°F oven for 5 minutes before filling.
- Reheat
- Reheat unfilled shells in a 350°F oven for 5 minutes to restore crispness. Do not reheat filled croissants; they will become soggy.
Store unfilled croissant shells in an airtight container at room temperature for up to 2 days. Filled croissants are best eaten immediately; they will soften in the refrigerator. If you must refrigerate filled croissants, do so for no more than a few hours, but expect some loss of crispness.
The laminated dough can be prepared up to 2 days ahead and kept refrigerated, or frozen for up to 1 month. The diplomat cream can be made 1 day ahead and stored in the refrigerator. The ganache can be made 1 day ahead and reheated gently. Bake the shells, cool, and store unfilled for up to 2 days.
Serving ideas
Serve the pistachio Suprême croissants as a showstopping breakfast or brunch centerpiece. They pair beautifully with a strong espresso or a cold glass of milk.
For an elegant dessert, dust with confectioners’ sugar and serve with a scoop of pistachio gelato. The contrast of crisp pastry and creamy filling is best enjoyed fresh.
To serve, arrange the croissants on a platter with the ganache side up. If you’ve made extra ganache, drizzle it over the top just before serving.
For a special touch, add a few chopped pistachios and edible flowers. These croissants are meant to be torn apart and shared, so provide plenty of napkins.

Crispy Pistachio Suprême Croissant: Bakery-Style at Home

Ingredients
- 500 g cold laminated brioche-croissant dough (made with 250 g European butter)
- 120 g Sicilian pistachio diplomat cream
- pistachio ganache, for glazing, to taste
Instructions
- On a lightly floured surface, roll the cold laminated dough into a rectangle about 1/2 inch thick. Fold into three letter folds, chilling 30 minutes between folds if the butter softens. After the final fold, roll the dough to a 1/4-inch thickness and cut 10cm rounds using a sharp cutter or ring mold.
- Place each dough round inside a 10cm steel ring mold on a baking sheet lined with parchment. Cover loosely with plastic wrap and let proof in a warm spot (about 75°F) for 2 hours, until the dough has risen and feels airy and pillowy.
- Preheat the oven to 390°F (200°C). Place a weighted tray or another baking sheet on top of the rings to keep the croissants flat. Bake for 18 minutes, until deeply golden and crisp. Remove the weights for the last 3 minutes if you want a more browned top.
- Remove the baking sheet from the oven and let the croissants cool in the rings for 5 minutes. Then carefully lift them out and transfer to a wire rack to cool completely, about 20 minutes. The centers should be fully set and no longer steaming.
- Fit a piping bag with a small round tip and fill with the Sicilian pistachio diplomat cream. Insert the tip into the side of each croissant and pipe about 20g of cream into the center, or until the croissant feels heavy and the cream begins to peek out.
- Warm the pistachio ganache until spreadable. Dip the top of each filled croissant into the ganache or spread it with an offset spatula. Let the glaze set for a few minutes, then serve immediately for the crispiest texture.
