Imagine tearing into a croissant with a shatter that echoes, releasing a river of vibrant green pistachio cream. That’s the Suprême, the viral NYC pastry that has taken over social feeds.
Now it’s possible to recreate that exact experience at home, with crisp, buttery layers and a luscious Sicilian pistachio filling. The secret lies in a laminated dough that bakes flat and even, and a diplomat cream that’s rich but not heavy.
The pistachio Suprême croissant is a study in contrasts: shatteringly crisp, deeply golden pastry giving way to a cool, velvety pistachio cream. The version here uses a laminated brioche-croissant dough with European butter, which creates those dramatic, airy layers.
The dough is proofed in ring molds and baked under weight, so it stays flat and even, like the ones in the best NYC bakeries. A Sicilian pistachio diplomat cream—essentially pastry cream lightened with whipped cream—provides the filling, while a pistachio ganache adds a glossy finish. Each bite is a symphony of textures and flavors.
Ingredients
- 500 g cold laminated brioche-croissant dough (made with 250 g European butter)
- 120 g Sicilian pistachio diplomat cream
- pistachio ganache, for glazing, to taste
Why this recipe works
The laminated dough—rolled with cold European butter and given three letter folds—creates dozens of paper-thin layers. When baked under weight, these layers stay flat and crisp rather than puffing into a traditional croissant shape.
The weight also ensures even browning and a sturdy base that can hold a generous amount of cream without becoming soggy. The result is a pastry that shatters with every bite.
The diplomat cream strikes the perfect balance: pastry cream provides structure and richness, while whipped cream lightens the texture to a mousse-like silkiness. Sicilian pistachios bring a deep, slightly sweet, and intensely nutty flavor that’s unmistakable. The ganache glaze not only adds visual appeal but also seals the top, keeping the croissant crisp even after filling.
Notes and substitutions
For the laminated dough, use a high-quality all-butter croissant dough or make from scratch with 500g flour, 250g cold butter, and a brioche base. The butter must be at least 84% fat for the best flakiness.
If using store-bought puff pastry, choose an all-butter variety; it won’t be as rich but will still work. Keep everything cold to prevent the butter from melting into the dough.
The pistachio diplomat cream can be made ahead and chilled. For the ganache, use a good white chocolate and pistachio paste; if you can’t find pistachio paste, grind roasted pistachios into a fine powder and mix with melted white chocolate and cream. The steel rings are essential for the flat shape; if you don’t have them, use clean tuna cans with both ends removed.
- laminated brioche-croissant dough: Use store-bought all-butter puff pastry sheets (about 500 g) if making laminated dough from scratch is not possible; the texture will be slightly less rich but still flaky.
- Sicilian pistachio diplomat cream: For a quicker filling, use a high-quality pistachio pastry cream mixed with an equal amount of whipped cream; omit the gelatin if using a stabilized whipped cream.
- pistachio ganache: Melt together 4 oz white chocolate and 2 tbsp heavy cream, then stir in 1/4 cup pistachio paste for a quick glaze.
