Tips for success

For the most authentic flavor, use fresh coconut water rather than bottled or canned. Fresh coconut water has a lighter, more delicate sweetness that complements the pork beautifully.

If you can't find fresh, use a good-quality bottled coconut water without added sugar. Also, be sure to use dark amber cane sugar—it has a deeper flavor that traditional white sugar lacks. You can find it in Asian grocery stores or online.

When making the caramel, don't walk away. Sugar can go from perfect to burnt in seconds. Keep the heat at medium and stir constantly.

If you're nervous, you can add a splash of water to the sugar before melting—this helps it melt more evenly and reduces the risk of burning. Once the caramel is ready, add the coconut water carefully to avoid splatters, and stir until smooth.

Variations

  • Chicken Version: Substitute chicken thighs, cut into 2-inch pieces, for the pork belly. Reduce cooking time to 3-4 hours on LOW, until the chicken is tender and cooked through to 165°F (74°C).
  • Spicy Kick: Add 2 thinly sliced red chilies or 1 tablespoon of sriracha to the slow cooker with the other ingredients for a subtle heat that complements the sweet caramel.
  • Extra Vegetables: Add 2 cups of peeled and cubed daikon radish or carrots during the first hour of cooking. They will absorb the sauce and become tender and sweet.
  • Coconut Cream Finish: Stir in 1/2 cup of coconut cream during the last 30 minutes of cooking to make the sauce richer and creamier, with a more pronounced coconut flavor.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water if the sauce has thickened.
Freezer
Freeze the cooled dish in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium heat, stirring occasionally, until bubbling. Alternatively, microwave individual portions in 30-second intervals until hot.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the dish even more delicious the next day. Reheat gently on the stovetop or in the microwave until warmed through. If the sauce has thickened too much, add a splash of water or coconut water to loosen it.

This dish is perfect for making ahead. Prepare the caramel and layer the pork in the slow cooker the night before, then refrigerate overnight.

In the morning, add the coconut water and fish sauce, and start the slow cooker. You can also cook the entire dish a day ahead and reheat it gently before serving—the flavors will be even more developed.

Serving ideas

Serve Thit Kho Tau hot over steamed jasmine rice, spooning the sauce generously over the top. The pickled mustard greens add a tangy, crunchy contrast that cuts through the richness of the pork and eggs. For a complete meal, add a simple cucumber salad or sautéed greens on the side.

This dish is often served family-style, with everyone helping themselves from a communal platter. It's also a wonderful centerpiece for holiday gatherings, especially during Tết.

The deep amber color and glossy sauce make it visually stunning, and the aroma is irresistible. Pair it with a crisp Vietnamese beer or iced tea to balance the richness.

Frequently asked questions

Can this be made without a slow cooker?
Yes, this dish can be made on the stovetop. After making the caramel, combine all ingredients in a heavy-bottomed pot and bring to a simmer. Cover and cook over low heat for 2 to 2.5 hours, until the pork is tender. Add the eggs during the last 30 minutes. Stir occasionally and add a little water if the sauce reduces too much.
Why does the caramel sometimes turn bitter?
Caramel can turn bitter if it's cooked too long or at too high a heat. The sugar should be melted over medium heat and removed from the heat as soon as it reaches a deep amber color. If it smells burnt, it's past the point of no return. To avoid this, keep a close eye on the sugar and be ready to add the coconut water quickly.
Can the eggs be added at the beginning?
Adding the eggs at the beginning is not recommended, as they will become tough and rubbery from the long cooking time. The eggs are added during the last hour so they warm through and absorb color without overcooking. This ensures they remain tender and creamy in the center.
What can be served with this dish?
Thit Kho Tau is traditionally served with steamed jasmine rice and pickled mustard greens. The rice soaks up the savory-sweet sauce, while the pickles provide a tangy contrast. Other good sides include a simple cucumber salad, sautéed bok choy, or a fresh herb salad with mint and cilantro.
How can the sauce be thickened?
If the sauce is too thin after cooking, remove the pork and eggs and simmer the sauce in a saucepan over medium-high heat until it reduces and thickens. Alternatively, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last 15 minutes of cooking.

Prep 20 minCook 6 hTotal 6 h 20 minServes 6
A ceramic slow cooker filled with braised pork belly cubes and dark mahogany eggs in a rich coconut caramel sauce.

Ingredients

  • 2 lb pork belly, cut into 1 1/2-inch cubes
  • 1/2 cup dark amber cane sugar
  • 3 tbsp fish sauce
  • 3 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups fresh coconut water
  • 6 large eggs, hard-boiled and peeled
  • Cooked jasmine rice, for serving
  • Pickled mustard greens, for serving

Instructions

  1. In a large skillet over medium heat, melt the dark amber cane sugar, stirring frequently, until it turns a deep amber color and smells nutty, about 5 minutes. Carefully pour in 1/4 cup of the coconut water to stop the cooking, stirring until the caramel dissolves into a smooth syrup. Remove from heat.
  2. Place the pork belly cubes in the slow cooker insert. Add the sliced shallots and minced garlic, then pour the caramel over the top. Add the fish sauce and the remaining coconut water. Stir gently to coat the pork evenly.
  3. Cover the slow cooker and set it to LOW. Cook for 5 hours, undisturbed. After 5 hours, gently add the peeled hard-boiled eggs, pushing them down into the liquid. Continue cooking for 1 more hour, until the pork is spoon-tender and the eggs are deeply colored. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker and let the dish rest for 10 minutes. Using a slotted spoon, transfer the pork and eggs to a serving platter. Skim excess fat from the surface of the sauce if desired. Serve hot over jasmine rice with pickled mustard greens on the side.
