Tips for success
For a deeper color and flavor, you can briefly sear the beef cubes in a hot pan before adding them to the slow cooker.
While this adds a step, the caramelization on the meat provides an extra layer of complexity to the final broth. If you choose to do this, ensure the pan is very hot and work in small batches.
If you prefer a thicker broth, remove a few pieces of the cooked carrot and mash them with a fork, then stir them back into the stew. The natural starch from the carrots will act as a gentle thickener, giving the stew a more luxurious, velvety consistency without the need for additional flour or cornstarch.
Variations
- Spicy Bo Kho: Add two fresh bird's eye chilies or a tablespoon of chili oil during the layering phase for a significant kick of heat that complements the aromatic spices perfectly.
- Root Vegetable Mix: Incorporate cubed daikon radish or sweet potatoes alongside the carrots for added texture and a slightly sweeter profile that pairs beautifully with the savory beef.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat slowly in a saucepan over medium-low heat until steaming hot, or microwave in 1-minute intervals, stirring occasionally.
Allow the stew to cool to room temperature for no more than two hours before transferring it to an airtight container. It can be stored in the refrigerator for up to three days.
The flavors often improve the next day as the spices continue to settle into the meat, making it an excellent candidate for leftovers.
This dish is perfect for making ahead as it reheats beautifully. You can prepare the entire stew a day in advance, let it cool completely, and store it in the refrigerator. When you are ready to serve, simply reheat it gently on the stove or in the slow cooker until it is warmed through.
Serving ideas
Serve the stew in deep, wide bowls to allow the aromatics to reach the diner. Always provide a generous amount of fresh Thai basil and sawtooth herb on the side, as the fresh contrast is essential to the Vietnamese dining experience.
The lime wedge is non-negotiable, as the acidity cuts through the richness of the beef.
A crusty French baguette is the traditional accompaniment. The bread should be toasted until warm and crisp, perfect for soaking up the flavorful broth.
Encourage guests to dip the bread directly into the stew, as the combination of textures—soft beef, tender carrots, and crispy bread—is what makes this meal so enjoyable.
