Tips for success

For the best flavor, use a good-quality sharp cheddar that melts well. Pre-shredded cheese often contains anti-caking agents that can make the sauce grainy, so shredding your own from a block gives a smoother result. If you prefer a spicier kick, add a pinch of cayenne or a dash of hot sauce along with the soup.

To make this a complete meal in one pot, add 2 cups of small new potatoes or baby carrots along with the broccoli. They will cook in the sauce and absorb the flavors.

If you like a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in during the last 15 minutes of cooking, then let it simmer uncovered until thickened.

Variations

  • Add Mushrooms: Slice 8 oz of cremini mushrooms and layer them with the broccoli. They will release moisture and add an earthy flavor that pairs beautifully with the cheddar sauce.
  • Spicy Kick: Add 1/2 teaspoon of crushed red pepper flakes or a diced jalapeño along with the soup for a gentle heat that cuts through the richness.
  • Bacon Topping: Cook 4 slices of bacon until crisp, crumble, and sprinkle over the finished dish just before serving. The smoky, salty crunch is a welcome contrast.
  • Herb Infusion: Stir in 1 teaspoon of dried thyme or rosemary with the soup. The herbs will perfume the sauce and complement the chicken and broccoli.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of broth or water if needed.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 30-second bursts, stirring in between.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken as it cools; add a splash of chicken broth or water when reheating to loosen it. Reheat gently in the microwave or on the stovetop over low heat, stirring occasionally, until heated through.

This dish can be assembled up to 24 hours ahead. Place the chicken, broccoli, soup, cheese, and butter in the slow cooker insert, cover, and refrigerate.

When ready to cook, place the insert in the slow cooker and cook on low for 4–5 hours, or on high for 3 hours, until the chicken reaches 165°F (74°C). Add 30 minutes to the cooking time if starting from cold.

Serving ideas

Serve the velvety cheddar broccoli chicken thighs over steamed white jasmine rice, as shown in the video. The rice soaks up the creamy sauce and balances the richness.

For a lower-carb option, serve over cauliflower rice or alongside a simple green salad. A sprinkle of fresh black pepper or chopped parsley adds a bright finish, though it's delicious as-is.

This dish also works well over egg noodles, mashed potatoes, or even in a crusty roll as a hearty sandwich filling. The sauce is thick enough to cling to whatever you pair it with.

For a family-style meal, set the slow cooker on the table and let everyone serve themselves. Leftovers are just as good the next day, if there are any.

Frequently asked questions

Can this recipe be made with chicken breasts?
Yes, boneless skinless chicken breasts can be used instead of thighs. Because breasts are leaner, they can dry out more easily, so reduce the cooking time to 2–3 hours on low. Check for doneness with an instant-read thermometer, which should read 165°F (74°C). Shred or slice the breasts after cooking.
Why is the sauce thin at the end of cooking?
The sauce may be thin if the slow cooker was covered and the condensation dripped back into the dish. To thicken, remove the lid and cook on high for 15–20 minutes, allowing excess moisture to evaporate. You can also stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water, then cook for 5 more minutes.
Can frozen broccoli be used?
Yes, frozen broccoli florets can be used. To avoid mushiness, thaw and drain them well, then add them during the last 30 minutes of cooking. This ensures they heat through without turning to mush. Fresh broccoli is still recommended for the best texture and color.
How can this recipe be made gluten-free?
Use a gluten-free condensed cream of chicken soup, which is widely available. The rest of the ingredients are naturally gluten-free. Double-check the labels on the cheese and butter to ensure they are gluten-free, though they typically are. Serve over rice or gluten-free noodles.
Can the leftovers be frozen?
Yes, leftovers can be frozen in an airtight container for up to 2 months. Thaw overnight in the refrigerator before reheating. The sauce may separate slightly upon thawing; stir well while reheating and add a splash of broth or water to restore the creamy consistency.

Slow cooker filled with creamy cheddar broccoli chicken thighs

Ingredients

  • 1 1/2 lb boneless skinless chicken thighs
  • 3 cups fresh broccoli florets
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 1/2 cups shredded sharp yellow cheddar cheese
  • 2 tbsp butter
  • steamed white jasmine rice, for serving

Instructions

  1. Place the chicken thighs in an even layer across the bottom of the slow cooker. Scatter the broccoli florets around and between the chicken pieces, tucking them in so they are mostly surrounded by the meat.
  2. Spoon the condensed cream of chicken soup over the center of the chicken and broccoli. Sprinkle the shredded cheddar cheese evenly over the top, then dot with the butter. Do not stir.
  3. Cover the slow cooker and cook on low for 4 hours, or on high for 2 1/2 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The broccoli should be tender but still bright green.
  4. Using two forks, gently shred the chicken thighs into large chunks right in the slow cooker. Stir everything together so the broccoli and chicken are coated in the creamy cheddar sauce.
  5. Spoon the hot chicken and broccoli mixture over steamed white jasmine rice in bowls or onto plates. Serve immediately.
